Chef John's Stuffed Peppers
This recipe was very easy to make, although I did not have the sausage, I imagine it would bring more depth of flavor. I had 4 large yellow peppers and after stuffing had a lot of mixture leftover. I would think a half cup of uncooked rice would do. But it was fine. I just put the rest of the mixture in the pan with the sauce and the pepper tops. I was also weary of mixing everything with the raw meat- and if I do this again, I may cook the meat just to see how it changes the flavor- with some browned bits, it may be different. I would think you could add anything to this like diced mushrooms or carrots or zucchini or beans. My husband liked it, my one daughter ate the mixture (not the pepper), the other daughter that loves yellow peppers wouldn't touch it (she's only 4 so that explains that) and I enjoyed it, yet felt like it needed something- just not sure what.

Vegan Red Lentil Soup
This soup is delicious. My entire family enjoyed it. I did not use cilantro or fenugreek as I didn't have any on hand. I used my whole butternut squash, which was more like 2 cups (maybe more) added extra lentils and used the entire can of coconut milk (it's the kind of leftover I will not use in time). That said, I added a little extra water...and what really made this dish for me was adding a two big spoonfuls of apple preserves from a local farm- its chunky like chutney and it adds the best mix of flavor to the curry and ginger, with a sweet hint of apple. Yum! Blended it all in the blender to make creamy.

Triple Berry Crisp
I just made this today with fresh blackberries, raspberries (red and white), and blueberries from the farmers market. I only used 1 cup of butter thought because 1.5 seemed like so much. It mixes much better if you just dig your hands in to get a good butter to oats/flour consistency. I love the crumble as much as the fruit so for me its a perfect amount. I cooked this in two 8X8 pans. My daughter had two girls over for a play-date and we (including her little sister) just finished off one of the pans by ourselves! We topped it with whipped cream- and one child even tried it with a scoop of marshmallow fluff! Yummy!
