Apple Strudel Muffins

Fantastic! Cut the sugar down to 1/3 cup white and 1/3 cup brown, cut the butter to 6 TBLS, used one medium apple grated and one medium apple chopped, and totally left off the struesel topping, and they are still fantastic! I'll definitely be making these again and again.

Hot Artichoke Spinach Dip

Really good, and easy to make changes for personal preference too. I always use fresh spinach and a little more then it calls for, more like 12-14 oz. I saute it quickly in a little butter and minced garlic until it wilts and then mix it in with everything else. I love that it's really chunky, more spinach and artichoke then cheese, although I usually add a little more cheese than it calls for too.

Candy Coated Pecans

I also had to up the oven temp a bit, up to 300, and sprinkled cinnamon sugar over them in the middle of cooking. Mine needed turning after 10 minutes, and needed more like 20 minutes in the oven.

Classic Waffles

Good, but not our favorite. I felt it needed more sugar and vanilla. I also tried this recipe in the blender. It worked well, but we thought it was a little dense. I'll probably try adding the egg whites seperately after whipping them to lighten them up next time.

Brooke's Best Bombshell Brownies

These brownies are fantastic!! Every time I've made them I've received multiple requests for the recipe. I subbed half brown sugar and used milk chocolate chips, those were my only changes.

Four Cheese Margherita Pizza

My husband and I both love this pizza. I've ever used fontina because I haven't had it when I've wanted to make this, but it's still fantastic. Defiitely marinate the tomatoes, it makes it so yummy.

Fajita Marinade I

Really really great, especially with the addition of a handful of chopped cilantro. I scaled back both the peppers by half cuz I'm a wimp and scaled the water down to 1/4 cup. This made for some fantastic fajitas tonight, thank you!

Tuna Fish Salad

Really bland, and way too soupy. I had to add more tuna and a bunch more seasonings, plus some dill relish to get it to something I liked. Sorry, but I won't use this again.

Red Skinned Potato Salad

We love this potato salad! We skip the celery as we don't like it, and used half a red onion and then a bunch of green onion, chopped. I also only needed 1.5 cups mayo, and added some dried dill.

Shrimp Stir-Fry

This was quite good - when my husband made it he made the following changes - no red pepper, used fresh veggies in place of frozen, added a little sesame oil and used more soy sauce. Everybody had seconds, and we'll definitely make this again!

Italian Spaghetti Sauce with Meatballs

We LOVE this spaghetti sauce!! My husband calls this restaurant quality. The first time I made this I accidently left out the pepper and basil and tomato paste and it still turned out great. The second time I remembered all the ingredients, but halved the tomato paste and we thought it was even bettter. I recommend using less olive oil than it calls for. So great and fresh tasting, everyone I've served this too has loved it!
