Simply Swordfish

I used less than half of the amount of spices, and it was perfect. The combination was very tasty. Instead of grilling, I baked them at 400 degrees for 15 minutes or so (they were pretty thick). Great, simple recipe!

Absolutely Amazing Ahi

The name says it all! I served this over salad of mixed baby greens, with some Sweet & Spicy Green Beans (recipe from this site) mixed in, as well as some peeled, roasted potatoes. This was fantastic!! I did sear the tuna for about 30 seconds per side, other than that I followed the recipe exactly.

Avocado Shrimp Ceviche-Estillo Sarita

Delicious! I refrigerated the shrimp in lime juice overnight, then added the other ingredients in the afternoon. I skipped the ketchup and didn't miss it. Served on tostadas on top of a layer of mashed avocado to hold everything together. Fantastic summer meal!! :)

German Potato Pancakes

Super easy and delicious! I didn't bother with draining the potatoes or anything, except to press them with a paper towel right after shredding. Served with some sour cream. Would be delicious with some fresh parsley mixed in!

I thought this was delicious - I baked the fish in the oven at 375 for about 25 minutes. The salsa was amazing, and it looks so great on the fish!

Baked Tortilla Chips

These have a great flavor. I had a hard time getting them cooked just right, I kept pulling them out and thinking they were done, but they were still chewy. I had to cook a bit longer than 15 minutes total.

Potato and Bean Enchiladas

Wow! This is another great vegetarian recipe from this site to add to my rotation! I followed the recipe exactly, except to substitute red enchilada sauce for ketchup (and added some extra to keep the inside moist), and I used shredded monterey jack cheese, since I didn't have any queso fresco. Delicious flavor!! Very time consuming though, but it was definitely worth it.

Marinated Grilled Shrimp

Fantastic!! I think this is my favorite shrimp recipe from this site. The combination of ingredients sounds odd, but it really works together perfectly! I didn't have fresh basil, so I substituted dried and added some fresh parsley. I'm excited to try it with fresh basil next time.

Grilled Marinated Shrimp

This was sooo delicious! I used frozen fully cooked shrimp, marinated it for about an hour and put it on the grill on skewers for about 5-6 minutes, turning once. I added fresh basil and oregano, which I would definitely recommend. This will definitely be one of my go-to summer recipes this year!

Seven Layer Taco Dip

Used this recipe as a base, but modified it for our tastes - layered it refried beans, homemade guacamole, sour cream, salsa, and cheddar cheese on top. Made the night before, and served cold the following day with tortilla chips - delicious!

Allie's Delicious Macaroni and Cheese

This was pretty good, but slightly bland. I even omitted the mozzarella and used equal parts sharp cheddar and Monterey Jack. I also added 1 tsp ground mustard and 1 tsp Worcestershire sauce. I might try it again and play around with increasing the cayenne or adding other spices. It's a good base recipe.

Angel Hair with Feta and Sun-Dried Tomatoes

Surprisingly delicious! I used penne pasta instead of angel hair. I was skeptical about the cilantro, but it actually made this dish very refreshing. I only had plain feta, but I think it would be even better with the tomato basil feta.

Delicious with naan. Followed recipe exactly except used can diced tomatoes instead of purée. Lentils cooked in about 10 minutes (few minutes boiling, rest simmering at low).
