Unbelievably good! A lot of work, but it is definitely worth it! I skip the raspberries, and use Granny Smith apples.

Apple Crisp III

DELICIOUS! So much better than the versions with oats. And it was very easy too, I used soy butter flavored spread instead of regular butter and it worked fine. I baked it for 40 minutes, which was pretty good, but it may have been better to wait until 50 minutes as others have suggested. Also used 1/2 brown sugar and 1/2 white, which I think is what made the topping so good. Thanks for a delicious and easy recipe!

Easy Pesto

This is super easy and very good. I like that it uses almonds, which are cheaper and easier to find than pine nuts. This makes for a very easy meal when you toss with some linguine!

Grilled Fish Steaks

I have made this recipe several times now, and I love it! I have used tilapia every time, which works perfectly. It does drip into the grill, so you may want to put foil down before adding the fish. I have also made it in the oven, which is good too, but it definitely makes a big difference when this recipe is cooked on the grill.

Eggplant Parmesan II

This was very good! I baked at 375 for 7 minutes each side, then after adding the sauce and cheese, baked for another 25 minutes. I followed other reviewers and salted and rinsed the eggplant first, and it wasn't bitter at all. Thank you!!

Seven Layer Tortilla Pie

This was sooo good! I used one can pinto beans, one can refried beans, and one can of black beans, which i think was perfect. The only other changes i made were to add a small can of black olives and I used Rotel for the chopped tomatoes. I just ate it leftover for lunch and I think it may be even better the next day! Thank you so much!!

Spicy Tomato Bisque with Grilled Brie Toast

This was DELICIOUS. By far the best tomato soup I've ever had! I did substitute the tomato sauce/diced tomatoes for the puree. Also, I used soft cream cheese (in a tub), which was very easy to whisk into the soup. This soup definitely has a kick to it, so tone down the red pepper if you don't like spicy food. I used ciabatta bread instead of rye, and it turned out really well. Thank you for such a great and extremely easy recipe!!

Chicken Pot Pie IX

This was really good! I used a frozen deep-dish pie crust. As suggested by other reviewers, I substituted garlic powder for the celery seed and cubed potatoes for the celery and it turned out really well. I will definitely be making this all winter!

Delicious and easy! I added breadcrumbs to the cheese mixture. I learned the hard way - don't make the cheese mixture ahead of time and refrigerate - it will harden and make it difficult to spread.

Ginger Glazed Mahi Mahi

This is one of the most delicious recipes I've gotten off this site! It is sooo easy too. Definitely DON'T skip the fresh ginger, it is a must! Fresh ginger can be frozen to keep for longer so that it's always on hand. I followed the advice of the first reviewed listed and grilled for exactly 8 minutes in a foil boat - it was cooked perfectly!!

Baked Asparagus with Balsamic Butter Sauce

This has become one of my favorite side dishes. I do follow the other reviewers' advice in reversing the measurements for the soy sauce and balsamic vinegar. I usually double or triple the amount of sauce and pour it over roasted redskin potatoes - DELICIOUS! Thanks for a great recipe!

Pumpkin Cranberry Bread

I have made this more times than I can count since I found this recipe. It is truly the best pumpkin bread recipe out there. The cranberries add so much flavor! I have substituted applesauce for the eggs, which worked fine and helped make it a little healthier too. Also, I think you can safely cut down on the sugar a bit without impacting the taste too much, if you are concerned about the sugar content. Using Craisins will keep the bread sweet enough.
