Fabulous Zucchini Grinders

I thought this was just okay. The texture of the zucchini is a sandwich like this was a little weird for me. I'd rather just have soy meatball subs, but that's just me!

Sesame Noodles

Delicious! I cut down the amount of Chili Garlic Sauce, but I regretted it, next time I'll keep the whole amount in, I think it would have improved the flavor. I used whole wheat spaghetti noodles, and added fresh chopped cilantro at the end. I also added some stir-fried cubed tofu. Great recipe - I'll be using this one again and again.

Basic Baked Spaghetti

I was very pleasantly surprised by this recipe! I made some modifications - I used veggie crumbles instead of ground beef, and I added garlic powder, dried basil, and dried oregano while it was browning. I used an assortment of cheese - mozzarella, Triple Cheddar, Parmigiano Reggiano, and Romano. I mixed some of the last two cheeses in with the warm spaghetti noodles. This is a great way to sneak in whole wheat pasta, we didn't even know the difference. Great base recipe!!

Absolutely Amazing Ahi

The name says it all! I served this over salad of mixed baby greens, with some Sweet & Spicy Green Beans (recipe from this site) mixed in, as well as some peeled, roasted potatoes. This was fantastic!! I did sear the tuna for about 30 seconds per side, other than that I followed the recipe exactly.

Butternut Squash Soup II

This was delicious, with a few additions. I used vegetable broth instead of chicken stock since we are vegetarian. I added a clove of garlic, a generous sprinkle of cayenne pepper and dashes of cinnamon and nutmeg as well. It was quite bland without them, but these additions make this recipe a 5-star!

White Pizza a la Chick Lit

A delicious base recipe! I used a Boboli pizza crust, and I added chopped fresh basil on top before baking. Also, I minced the garlic and rubbed it on the crust with the olive oil.

Baked Tortilla Chips

These have a great flavor. I had a hard time getting them cooked just right, I kept pulling them out and thinking they were done, but they were still chewy. I had to cook a bit longer than 15 minutes total.

Sloppy Joes II

Delicious sloppy joe recipe. This is your basic old-school sloppy joe, which is exactly what I was looking for. I did substitute 1/3 of the ketchup with barbeque sauce, which I might skip next time, I'm not sure any changes need to be made to this recipe! I served on King's Hawaiian dinner rolls as sliders, since I didn't have any hamburger buns.

Mexican Rice II

This rice has a fantastic flavor. I used brown long-grain rice, and 25 minutes wasn't nearly long enough to cook it, I think you'd need a good hour to simmer it to be soft enough. I will definitely be making this regularly, it's a perfect side dish to enchiladas or any Mexican main course! Thanks!

Potato and Bean Enchiladas

Wow! This is another great vegetarian recipe from this site to add to my rotation! I followed the recipe exactly, except to substitute red enchilada sauce for ketchup (and added some extra to keep the inside moist), and I used shredded monterey jack cheese, since I didn't have any queso fresco. Delicious flavor!! Very time consuming though, but it was definitely worth it.

Marinated Grilled Shrimp

Fantastic!! I think this is my favorite shrimp recipe from this site. The combination of ingredients sounds odd, but it really works together perfectly! I didn't have fresh basil, so I substituted dried and added some fresh parsley. I'm excited to try it with fresh basil next time.

Stove-Top Macaroni and Cheese

I did not enjoy this at all. It was quite bland, even though I added the paprika, and mixed in some other types of cheese (pepper jack, mozzarella). The consistency was weird to me too. I'll stick to the baked recipes from now on.

The Best Vegetarian Chili in the World

This was really good, but I think there was just TOO much going on in it for me. I would definitely omit at least the garbanzo beans if I made this again, they didn't really fit in my opinion. It's a lot of work for sure, but the flavor overall was really good.
