Spaghetti Squash I

This was a good introduction to spaghetti squash, but it was a bit bland for my taste, I might try a different recipe for next time. My husband really enjoyed it though, so I'd give it 4 stars.

Winter Fruit Salad with Lemon Poppyseed Dressing

This is a great recipe, the dressing is delicious, it's very tart and sweet tasting. I made it a day in advance. I did use Spring Mix instead of romaine, which I think is a more appropriate base. Skipped the cheese, and subbed toasted pecans for the cashews.

Seven Layer Taco Dip

Used this recipe as a base, but modified it for our tastes - layered it refried beans, homemade guacamole, sour cream, salsa, and cheddar cheese on top. Made the night before, and served cold the following day with tortilla chips - delicious!

Potato Chips

Fantastic!! I couldn't believe how easy this was. Took a little longer than recommended though. They turn brown within a matter of a few seconds, so keep a close eye on them towards the end of the cooking time.

Perfect fool-proof pancake recipe!! I followed it exactly, and it made 6 fairly small pancakes, so you should probably double it for 4.

My Crab Cakes

Restaurant-Style Hashbrown Casserole

Skipped the onion and used Cream of Mushroom soup, since we are vegetarian. Also added some Colby Jack cheese with the cheddar, along with some sour cream. Delicious!!

California Grilled Veggie Sandwich

Wow - this was delicious!! I didn't have the yellow squash, so I skipped that, and I used roasted red peppers instead of fresh. I had parmesan focaccia, which made this sandwich even better.

Fabulous Zucchini Grinders

I thought this was just okay. The texture of the zucchini is a sandwich like this was a little weird for me. I'd rather just have soy meatball subs, but that's just me!

Sesame Noodles

Delicious! I cut down the amount of Chili Garlic Sauce, but I regretted it, next time I'll keep the whole amount in, I think it would have improved the flavor. I used whole wheat spaghetti noodles, and added fresh chopped cilantro at the end. I also added some stir-fried cubed tofu. Great recipe - I'll be using this one again and again.

Basic Baked Spaghetti

I was very pleasantly surprised by this recipe! I made some modifications - I used veggie crumbles instead of ground beef, and I added garlic powder, dried basil, and dried oregano while it was browning. I used an assortment of cheese - mozzarella, Triple Cheddar, Parmigiano Reggiano, and Romano. I mixed some of the last two cheeses in with the warm spaghetti noodles. This is a great way to sneak in whole wheat pasta, we didn't even know the difference. Great base recipe!!

Absolutely Amazing Ahi

The name says it all! I served this over salad of mixed baby greens, with some Sweet & Spicy Green Beans (recipe from this site) mixed in, as well as some peeled, roasted potatoes. This was fantastic!! I did sear the tuna for about 30 seconds per side, other than that I followed the recipe exactly.
