Spinach and Orzo Salad

Delicious!! Substituted slivered almonds for pine nuts and omitted feta. Just eyeballed adding the olive oil and balsamic vinegar, I think it was a lot less than called for in recipe.

Spicy Vegan Potato Curry

This was really good. I couldn't find garam masala so I excluded it. I added some red curry paste and also added tofu and substituted edamame for the peas. Served with white rice and naan. Recipes makes a lot!

Easy Vegetable Pot Pie

This was surprisingly good and pretty easy. I used frozen mixed veggies for less sodium (carrots, green beans, and peas) and one diced potato. Skipped the beaten egg on top. I took the suggestion to cook the bottom crust a little bit first. This made really good leftovers too.

Green Bean Casserole I

Very good flavor. Only problem was that it was a little runny, even after substituting sour cream for half of the milk. I would cut the milk down even further if I make again.

Insanely Easy Vegetarian Chili

Super easy and delicious! I didn't have carrots, mushrooms, or celery, so I omitted them. I substituted a packet of McCormick chili seasoning for all the spices too, which made this even easier, no measuring.

Grilled Garlic Artichokes

Delicious!! Grilling adds a wonderful flavor. I still prefer a lemon-mayo sauce with the artichokes, but this was a delicious basting sauce for grilling them.

Banana Banana Bread

This bread is amazing, and totally fool-proof. I've made it both in a regular loaf and mini-loaves. I used about 5 medium-sized bananas for each batch. Delicious!! Rave reviews from everyone.

Barlow's Blackened Catfish

This was tasty, very spicy even after I cut the cayenne in half. Definitely smokes up the kitchen, next time I'll probably try putting the cast iron skillet out on the grill to cook them.

Quinoa Black Bean Burgers

Love these burgers!! So delicious, and they are pretty easy, although cooking the quinoa does add some time. I usually skip the onion and garlic, and substitute onion powder and garlic powder, to save time. Really good with some lemon-mayonnaise, fresh spinach, and sliced avocado, on a toasted whole wheat bun.

Angel Hair with Feta and Sun-Dried Tomatoes

Surprisingly delicious! I used penne pasta instead of angel hair. I was skeptical about the cilantro, but it actually made this dish very refreshing. I only had plain feta, but I think it would be even better with the tomato basil feta.

Delicious with naan. Followed recipe exactly except used can diced tomatoes instead of purée. Lentils cooked in about 10 minutes (few minutes boiling, rest simmering at low).
