Chicken Puffs

We will make these again! I cooked the chicken in EVOO with garlic, salt and pepper. I then shredded it and mixed it up with cream cheese and garlic powder. I didn't have croissant dough, but I did have some home style biscuit dough. I took each biscuit, rolled it out into a flat circle and put the chicken mixture in the middle. I rolled another biscuit and put it on top of that. I used a fork to press the edges together and brushed with EVOO and then some garlic salt. This was so pretty and easy! I won't even try this with crossiants, only biscuits. A great meal for picnics or weeknight. You could make the chicken mixture the day before and just throw it together. I might put green peas into it next time for some color. Serving this with gravy was key!!!

Quick and Easy Chicken Noodle Soup

Love this recipe! So easy to whip together. I bought a rotissere chicken and used that for the soup. Although I think this is a good quick way to get chicken in the soup, it felt apart and was really stringy and i think a bit overcooked. I will try to make the time to do my own chicken next time. I did use chicken bouliion instead of broth and while I think this added flavor it also added salt. I did not add any other salt and still felt it was borderline too salty. Next time I'll use more water with the boullion. We LOVED this soup. I doubled it and it was nice to have for a couple of meals. This will be a Fall fave in our house!

Mini Cheesecakes I

These were terrific and EASY! I made in an afternoon for dinner that night and I have 3 kids running around. Leaving out the cream cheese overnight or all day helps in a major way to soften it. I use a food processor to grind up the whole box of vanilla wafers and didn't use all of them, so I have that for the next time! I added mini chocolate chips to 1/2 the batter for chocolate chip cheesecakes. I had fresh fruit and canned fruit as toppings and shaved a dark chocolate bar on top of all that and it looks so fancy! Made about 18 regular "muffin" sized cakes.

Spinach Quiche

I made this with no mushrooms or onions and it was still fantastic! It got so many compliments and requests for the recipe. I will keep this as my go to breakfast food. I do think there was too much milk and maybe you only need 3 eggs, I had leftover egg mix because the deep dish crust was already filled and that was with no mushrooms! Make this for sure if you want to wow!

Cinnamon Ice Cream

I have been making homemade ice cream my whole life. This ice cream is fantastic. It is rich, creamy, the perfect amount of cinnamon and so refreshingly light at the same time. I have an ice cream maker that holds 5 quarts. I doubled this recipe and should have tripled or quadrupled it. It did not make enough for a crowd even with doubling it. Shoot. This will be at the top of my list from now on with increasing the recipe for sure! I will serve with oatmeal chocolate chip cookies or apple pie/crisp. THANK YOU!

Balsamic-Glazed Salmon Fillets

This was awful. I love salmon and I love new recipes. My parents were over for dinner and they didn't like it either. I followed the recipe to a T. I have two left over pieces of salmon and I don't want to eat them because I didn't like the flavor at all. Just had hoped for so much more. Ugh, I will NEVER make this again.

Penne with Chicken and Pesto

This is a great pasta dish! It was good warm and would be good chilled too! This will be my new weeknight dinner and picnic meal go to. Will use some of the heavy cream subs next time to make more healthy. THANK YOU for this! You could add pine nuts for fun too. YUMMEEEEEEE!!!!!

Easy Taco Casserole

This was good and got some "this tastes great!" comments. I used ground turkey instead of beef, used a taco seasoning pack instead of the other seasonings. I did not put the crushed chips into it, easier left overs and you'll always have crunchy chips. This was easy and great. Can make the night before and put in the oven or crock pot the next day!

Cheese Cake Cups

Did follow other reviews and added 1 cup of sour cream, and used a full cup of white sugar. I used a whole box of Vanilla wafers, ground them up and added 1/4 cup of melted butter as the crust. I might add a pink of lemon juice to give it a kick next time. I added mini chocolate chips to 1.2 of the batter and they were great. For the toppings I used canned blueberries and red raspberries in their own syrup, fresh blueberries and raspberries and I shaved dark chocolate on top, they were terrific! So easy and so good. I will make these again and again.

Slow Cooker Italian Beef for Sandwiches

This was soooooooooo good! And easy! I love that you don't have to brown it for it to be good. The taste was so good and got many compliments. I used a 2.5 lb chuck roast, 3 cups of beef broth and all the spices as in the recipe. Put it in the crock pot for 10 hours, shred it at 8 hours, put on whole wheat French rolls and under the broiler with provolone cheese for 2 minutes. I would cover all of the bread with cheese so it doesn't burn in the broiler! The 2.5 roast make 7 sandwiches. If you want to impress with little work use this recipes.

Chocolate Trifle

This was a hit. I took others advice and used heavy cream that I whipped to mix in with the pudding. I also added a couple of "rows" of strawberries which was great. I couldn't find toffee chips, so I ground up Skor bars and that worked great, Oreo cookies gound up would be good too. I did layer carmel over the brownies, but not before they baked, I'll try that next time. I used a chunk brownie mix and forgot to put the first layer of actual cool whip so it didn't look as nice as it could, but this isn't really meant to look pretty as the main feature is it tastes AWESOME! Took to a church function and everybody was asking for the recipe. I made the night before and it sat in the fridge for almost 20 hours and was great. Need a heavy spool to serve it with. It's not pretty but the taste is killer!

Zucchini Patties

This was a waste and a disaster. I really wanted these to be as wonderful as they sound. I made exactly as recipe states, added some garlic powder and used onion powder instead of onion. The patties stuck to the bottom of the pan. I used two different pans and two different heats. They didn't work either way. I also used veggie oil with one batch and olive oil with another batch. I wish I could have made these work, but I won't do this one again. Cleaning both my pots is going to be a bugger.

Balsamic Marinated Chicken Breasts

This popped into my email as a new recipe and I had chicken in the fridge so I tried it last night. I'm glad I did! It was so easy to marinate during the day - pop it into the oven and you have a great weeknight meal. While it was baking I could work on the other dishes. I did not use red pepper flakes and used fresh rosemary and fresh garlic. My husband said "wow, this is good!". Make this dish!

Maple Salmon

Really enjoyed this. Super easy and great taste. Marinated for 30 minutes. I did add some ginger to the mix and 3 garlic cloves. Cooked in a shallow dish for 20 min. Should have spooned some of the extra sauce at the end of baking over the salmon for more flavor. Highly recommend.

Delicious Raspberry Oatmeal Cookie Bars

These aren't as good as I thought they would be. They are a bit crumbly, although I followed the reviews to help that. They don't have a great taste and I would have liked them to be a bit softer. May try making them again, but not what I thought they were going to be.

Peanut Butter Cup Brownies

I made the mini brownies. I put cupcake wrappers in, then put the unwrapped peanut butter cup in the bottom and put the brownie mixture on top. I made one batch like this and made another one with the brownie mix on the bottom and then the peanut butter cup. The PB cup first and then brownies came out WAY better and you really were surprised when you bit into it! Baked at 325 for 13 minutes.

Easy Cheddar Biscuits with Fresh Herbs

These were easy to make and good for a weeknight dinner. I did use more cheddar cheese which I think was good. Chopped up the rosemary as fine as I could. Use a big cookie scoop to scoop the muffins onto the baking pan. They looked good, tasted great and I will make again.

Corn and Zucchini Melody

4 stars because I change the recipe, but I like the idea of it! I left out the bacon and onions...just sauteed the zucchini and corn in EVOO and added kosher salt, black pepper and a little butter. It was a hit all around. I will make this again...it's a great way to have zucchini!

Italian Butter

I didn't use the red pepper flakes. I did mix up the herbs (did not crush) and put the 1/4 cup of olive oil in to let it hang out together. Then I put some of that mixture on a plate later and added more olive oil and had balsamic vinegar as an option as well. Served with cut up french bread. Everybody, especially men, were raving about it! So easy and such a pleaser.
