Exquisite Pizza Sauce

Very good and easy! I used 1/2 tsp garlic powder, 1/2 tsp salt, and zero anchovy. I eye-balled the honey, looked to be a tad less than 2 tbs.

Bar-B-Que Sauce

I whipped this up because I ran out of bottled BBQ sauce. I simmered the sauce for 30 min and added 2 tbs water. This BBQ sauce is simple and tasty. I'd make this again because I always have the ingredients on hand. Bye-Bye bottled BBQ!

Homemade Sloppy Joes

We love this sandwich! I drained most of the fat, reduced the brown sugar by half, added 1/8 tsp. cayenne pepper, and a tad more salt. YUM!

Amazing! I make these for my husband’s bosses around the holidays. They always come out so moist and flavorful! Sometimes I throw a crumb topping on top just before baking.

Pumpkin Apple Streusel Muffins

Moist and delish! Halved the recipe which made 6 regular sized muffins and 5 mini's. I took the suggestion of reducing the sugar by half which turned out to the the perfect amount of sweetness for us. I added 1/4 c. raisins and will try shredding the apple next time. Walnuts would also make a wonderful addition. Make sure to fill your muffins to the brim to get the perfect muffin top. Before you pop them into the oven spray the top of the muffin tin with spray so the overflow doesn't stick. Will make again!

Healthier Downeast Maine Pumpkin Bread

Yummy! Decided to cut the recipe in half and used my 9x5 loaf pan. Omitted the raisins and pumpkin seeds, also replaced half of the brown sugar with white because I ran out. I'm giving this recipe five stars because it's a great healthier alternative just like the recipe states, although I prefer it a tad sweeter. This bread was delish, very moist and full of flavor! It's a keeper. :-)

Waffles I

These were ok. Made these as directed, thought they were a little dry and not much taste. My husband thought they were cake like. I decided to topped them with fresh mixed berries and pure maple syrup. The dish as a whole was yummy but I'll use a different waffle recipe next time.

Amazing! Five stars hands down. Even more delish topped with fresh blackberries and pure maple syrup. I did not brush my griddle with vegetable oil but butter, everything else was the same.

German Apple Cake I

One of my favorite cakes! This recipe would be five stars if it didn't suggest 1 c. vegetable oil, it's unnecessary. I only use 1/2 c. and it comes out very moist. I leave the skins on the apples (why remove them..??), only use 1 c. sugar (half white, half brown), always in a bundt pan and bakes for 40-45 min. The cake is amazing on it's own but even more amazing with a little homemade cream cheese icing. Use only a half block of cream cheese when making the icing and swirl it right on top! Yummmm.....

Pumpkin Roll I

My rating would of been 5 stars if the recipe added 1/4 tsp. cloves and 1/4 tsp. nutmeg which I included. I only cooked for 13 min and it came out beautifully! No cracks and the cream cheese portion was the perfect amount for us. I usually double the recipe and just throw in the entire can of pumpkin puree. Keep one for ourselves and take the other to the party!

Judy's Strawberry Pretzel Salad

I LOVE Strawberry Pretzel Salad! Make this... RIGHT NOW! A couple tweaks... I make my own whip cream w/ heavy cream. You do not need to add sugar to the whip. The 1 c. white sugar to the cream cheese is enough (at least for us it is). I also like to use a 3oz strawberry mixed with 3oz raspberry jello. Sometimes I like to add more pretzels too. Soo good!

Cream of Fresh Asparagus Soup II

My husbands new favorite soup! I didn't have chicken stock so I substituted water and 2 chicken bullion cubes. If you are using these I would suggest to hold off on the salt then add to taste. Before I realized there was no garlic in this soup I already minced two cloves so I threw them in the pot. I also cooked the asparagus in the stock and pureed everything together with my hand held blender. I wanted to save a step. It was also just as good w/o the sour cream. Delish!

Mom's Prize Winning Raw Apple Cake

The only change I made was use sour cream in place of sour milk and added 1 teaspoon of vanilla extract. I did not bother peeling the apples. Very moist cake! Next time extra spices need to be added. Maybe nutmeg and more cinnamon, it was a little bland. It was a very easy cake to throw together.

Chicken Cordon Bleu II

I scaled down the recipe to 3 servings. I used a little more flour than called for, added in garlic salt and black pepper. I used chicken broth instead of the wine which I doubled and didn't use the bouillon cube. The amount of butter was unnecessary and scaled that down a tad. To get a good role on the chicken the breasts must be pounded very thin. I gave it four stars because I thought the measurements and seasonings were a little off. This recipe is very easy and oh so good. Yummm....

Sausage, Peppers, Onions, and Potato Bake

Amazing! Halved the recipe and I wish I didn't! I omitted the white wine and used more chicken stock instead. I also only used 2 teas of olive oil in the beginning not the 1/4 cup. The sausage rendered off enough fat and oil its unnecessary to add more. I used red potatoes, 1/2 tsp garlic powder and added carrots which I thought was a good move. Will definitely make again!

Baked Pumpkin Bread

This was a great pumpkin bread! Super moist. I decided to make it more healthier by only adding 1/2 cup packed brown sugar and 1/2 cup wheat flour. I think I might add some cloves next time. My husband said this was his favorite so far! I call it my yummy diet pumpkin loaf. :)

Best Brownies

Wowzers! Super sweet and rich. Made as directed. The brownie itself is good, just very sweet. The icing didn't work out for me. I couldn't get a good consistency. My brownies looked like crapola after I tried to ice them.. lol. Next time I'll use less sugar and won't bother with the icing. These were also much better a few hours later when they were cooled. A good easy go to brownie recipe minus the icing!

Red Velvet Cupcakes

The only change I made was using buttermilk instead of milk, thinking it would make the cupcake more moist. This cupcake was way to heavy and dense for me and my family. I was also very careful not to over mix so I am not sure what happened...So disappointing!

Holly's Chicken Cordon Bleu Casserole

We were not a huge fan of this. I am glad I scaled down the recipe to six servings. I roasted two big chicken breasts w/ salt, pepper and olive oil in the oven. When cooled chopped it up into small chunks. Used good ham and no scallions. I even spiced it up with pepper, garlic powder, and dried onion. Instead of corn flakes I used Ritz which was good. 3 Cups of Swiss was a lot and only used 1 cup. I picked out the chicken and my husband ate the rest. I don't think I will be making this again and will stick to the traditional Chicken Cordon Bleu.

Saltine Toffee Cookies

Amazing! I have been making these for years and tried several variations. My favorite is chopped salted mixed nuts and raisins. Everyone loves them! I have also used white sugar instead of brown and even reduced it to 3/4 and didn't notice a difference. These are a staple every holiday season!
