Farmer's Casserole

This was a very good light supper or brunch dish! I prepared it exactly as written EXCEPT I followed the suggestion of other readers and pre-cooked the hash browns until crispy prior to making the dish and added a bit of Dijon mustard. Serve with fruit as directed or with a green bean or lettuce salad as I did. A keeper in my house!

Stir-Fried Vegetables with Chicken or Pork

This is a good, basic stir-fry which my family liked a lot. I made it according to the recipe, except I used frozen veggies as a time-saver and it worked out just fine. I also added additional garlic and about a teaspoon of chili sauce. Next time around, I will use all the veggies listed, fresh, and I'm sure it will be even better.

Pork Chops in Beer

Delicious, tender chops that whole family enjoyed. I served it with spinach, and rice that I cooked with the chops as others suggested. I made it almost exactly as written but I did brown the chops with a little garlic first. Next time I will add less sugar as it was a little sweet for my taste but that's the only change I'd make. Great easy supper!

Crunchy Turkey Salad

This really filled the bill for a main-dish salad - delicious! In fact, I realized that I didn't have celery so to maintain the extra crunch I substituted chopped apple and cabbage and it was great. The toasted sesame seeds give it so much flavor. I will be making this again.

Oatmeal Pancakes

My family and I really liked this recipe, served with applesauce or maple syrup. I didn't have the time to get buttermilk, so mixed light sour cream with milk, and they still worked out. Hearty, tasty, and healthier than white-flour or boxed mix pancakes!

Split Pea Soup with Rosemary

This soup was delicious; the first time around I used sausage instead of bacon as I had it on hand, but I will make with bacon tonight. It is hearty and healthy and easily adjustable for how thick or thin you want it. Thanks for a delicious recipe!

Swedish Meatballs

This was delicious...my first time making Swedish meatballs! I made it per the original recipe (with a splash of Worcestershire as others advised). It took more time than I'd planned for the sauce to thicken, but it did and tasted great. I served it with Brussels sprouts and noodles and my whole family ate it up. Thanks.

Ratatouille

This was tasty, but not quite the texture I had expected based on other ratatouilles I'd eaten. I found it was better served at room temperature rather than hot or chilled; and it was a bit runny so I had to drain the juices. Like another reader, I needed more room for the veggies than a 1.5 qt. casserole provided. With a few tweaks, I will definitely make this tasty and nutritious dish again!

Lower Fat Banana Bread II

This was an excellent low-fat banana bread. As I had several overripe bananas, I used three instead of two and added about 1 TBS additional sugar for a bit of a sweeter bread and it turned out well...moist, flavorful. Thank you for a good healthy quick bread.

Slow Cooker Lentil and Ham Soup

This was excellent! Made it exactly except we added a bit more water and a can of diced tomatoes instead of sauce, per some of the other suggestions. It was a delicious, flavorful and healthy supper for my family which I made in the crockpot and simmered all day while I was at work. Thanks for a winner!

Whole Wheat Banana Nut Bread

A little dry and not quite sweet enough for my family's taste. I thought it was quite tasty for such a healthful bread, so next time I will add some applesauce, cinnamon, and a little more honey and hopefully that will make us all happy! Good basic recipe.

Lighter Fettuccini Alfredo

This was quite good; my whole family enjoyed it. I did have to add a bit of cornstarch, stirred into skim milk, to thicken it. I also added some pre-cooked shrimp I had on hand and made it shrimp fettuccini alfredo! Served with a green salad, it was a really tasty meal.

Mom's Meat Loaf

This was a delicious change of pace from my usual tomato sauce meatloaf. Following others' suggestions, I reduced the amount of brown sugar in the glaze , but followed the recipe otherwise and it turned out very well.
