Funky Enchilada Casserole

Reviewed: Oct. 4, 2006
this recipe was really yummy. I did add a few things to it like black olives, I also put enchilada sauce on bottom of cake pan so shells wouldn't stick. And on tortilla shells spread refried beans on them put chicken mixture in and topped with a little more enchilada sauce. cilantro and cheese

Broiled Tilapia Parmesan

Reviewed: Oct. 12, 2006
well as the other reviews have showed, is a great recipe. I have never had tilapia before but it was really good and simple to make, I didnt have onion powder but used garlic powder. was still good. And there is litlle prep work for this and you can have a whole meal done in no time at all. Will for sure make this again. And some have said this is fishy, if so you bought bad fish. very mild white fish

Asian Orange Chicken

Reviewed: Oct. 23, 2006
Recipe was good, never made orange chicken, but bf likes it so I tried it. As always I read the reviews first and get ideas etc etc . I used 3 chicken breast doubled the sauce and I did not double the cornstarch , simmered it a bit to see if thickness was what I wanted , didnt need to add more cornstarch. Would use a little less lemon juice, BF isnt big on the lemon juice. I didnt have flour so coated it with cornstarch, and kept chicken in oven on warm until sauce was the consistency I wanted it to be. I like another reviewer had said, made it with basamti rice, and stir fried veggies from the frozen section at store. Topped with some chow mein noodles for some crunch. will make it again for sure, but maybe add it all together and make it as a stir fry.

Spaghetti Squash I

Reviewed: Oct. 23, 2006
My boyfriend and I had never had spaghetti squash, but as he said, I would give it a 10 star if I could. I am not a fan of squash at all.... but this was so good... All the right blends of veggies. I didnt have fresh basil, used less of the dry basil, also sauted veggies in olive oil , and depending on the size of squash might take longer then 30 mins, i just did the knife test, and knew it needed more time, so added 15 more minutes on.Had a medium size one and well there wasnt any left overs. I had a bowl and bf had the rest, he loved it.. So hats off to the chef who made this a keeper in our house. I also added grated parmesan cheese on top after it was served, yummy we love cheese :) and a loaf of fresh bread to go with it is a meal in it self. This would go great as a side dish for the parmesan tilapia fish , that I also found on here. That too was good. I love to cook and have found so many good recipes on here, this is at the top.... go figure and I thought I hated squash.

Chocolate Billionaires

Reviewed: Dec. 26, 2006
This recipe was great. I did not have pecans on hand but had walnuts and they still turned out well. Took them to my x mas party , and had many request for the recipe. Next time I make them I am going to try and add a small amount of peanut butter in them , I think it would be a good mixture.

Water Chestnuts a la Bacon

Reviewed: Mar. 26, 2007
we too have been making them a long time but on ours we use 1/2 cup chili sauce, 1 cup brown sugar, 1 cup mayo mix together pour over wrapped bacon chestnuts, and bake 350 45 mins . Before I pour sauce on them I microwave them 10 min or so, to give them a head start on cooking. never any leftovers

Slow Cooker Macaroni and Cheese I

Reviewed: Sep. 13, 2007
I liked this mac and cheese recipe, very easy. I would not cook it that many hours, I only did 3 1/2 hours and that was plenty, and I do stir my crock pot items before they are done. After 2 hours I stirred it. I also added a little velvetta and I used extra sharp cheese , and plenty of grated onion in it salt and pepper too. If you like a custard texture to mac and cheese you will like this

Antipasto Squares

Reviewed: Sep. 28, 2007
These were Excellent... I did do what a few viewers have stated. On the bottom crust I sprinkled some garlic powder all over it, and also pre backed it 6 minutes I layered it as stated but I added sliced green onions on top of the cheese and the rest of the meat and roasted peppers, and I used 3 eggs, a few dashes of hot sauce in egg mixture, parm cheese and pepper. Oh and I almost forgot instead of boiled ham I bought hot ham And I used one more egg on top crust. Baked for the time it said with foil, and baked uncovered 20 mins, but checked to make sure wasnt browning to much. I let it rest 10 minutes. And it came out of pan perfect and tasted yummy....I am my worst critic when it comes to cooking but I have to say this was really good.. Thanks for the recipe it is pricy to make but I will make again for sure.

Beer Dip I

Reviewed: Mar. 24, 2008
I liked this dip we took it our friends and it was my first time trying and or eating it so I told them they were my guinea pigs and they loved it. But as I was just going on to write this review I realized I completely forgot the cheddar cheese... :( But it was good just the same. I did add double beer and mixed it in the processor. Next time I will have to make it the way it is written, how I screwd up something so easy I will never know.. But it ended up gone even without the cheese.

Pistachio Fluff Fruit Salad

Reviewed: Apr. 19, 2008
I have made this in the past as it was written and it was good. But recently my Bf can't have seeds so I changed it and added banana creme pudding mix instead of pistachio. And deleted the banana's, I also added extra mandarin oranges and some coconut flakes. No complaints very good recipe and can be made to what ever your preference is.

MMMMM... Brownies

Reviewed: May 8, 2008
these were easy and quick to make and I had everything on hand too, but they were to cakey for me. I like a more chewy dense brownie, but I was craving choc and it did the trick. Next time I would put choc frosting on it

Dolmas (Stuffed Grape Leaves)

Reviewed: Jul. 19, 2008
my grandpa was from the middle east and I remember these growing up I love them. Only we made them with ground lamb breast with rice and mint and lemon. yummy. I can't ever find grapeleaves with lamb in them, not even in a restaurant that sells them I will try this but will add lamb and leave the currants and pinenuts out, as that is not how I like them.

Sour Cream Coffee Cake III

Reviewed: Aug. 7, 2008
I made this as is, except like others I doubled the topping .I also had to cook tem minutes longer , I checked it with a tooth pick and it was done. To lisa who made it in a pie plate that is a lot of batter for that small dish I can see why it took so long to cook. When I brought it to the office I had many requests for the recipe. And most of them were dietitians If they only knew how much calories were in that. But they do now cause they have the recipe. And one said it is the best she has ever had and that she wanted to eat the whole pan, I only brought some not all of it, and it was gone in minutes

Brooke's Best Bombshell Brownies

Reviewed: Oct. 16, 2008
I never made brownies from scratch, but these were real easy to make and I had everything on hand , and taste so much better than a box mix. I took it into our office today and had many compliments. Only thing different I did was to use only 2 1/2 cps sug, I cooked it in glass 13 x 9 pan and only for 30 minutes. They were perfect.. I also added frosting as if they weren't sweet enough. My Boyfriend tasted them and said your not taking them all to work are you lol, So I did share with him. Great recipe thx

Pork Tenderloin with Mustard Sauce

Reviewed: Dec. 31, 2008
made this tonight and it was just ok for me. I did marinade it all night and made mustard sauce too at same time. I have made many pork tenderloins, and I hardly ever marinade , just rub spices on and your good to go. They will always come out tender unless of course you over cook it. And I did only use 1 tbsp of mustard in sauce and it has a kick to it. I didnt care for the taste and neither did my BF. Will I make again maybe...
