Buffalo Style Chicken Pizza

This was wonderful! I made it twice in the same week! Following other suggestions, I used ranch instead of blue cheese and I used a blend of monary jack, cheddar and mozzarella cheese. I also cooked the chicken with a bit of salt and papper and then marinated it for about 20 minutes. The leftovers were even good!

Cinnamon Raisin Bread I

This is incredible!! I admit, it's my first homemade bread that I didn't use the breadmaker. I followed the recipe almost exact but used half whole wheat flour and doubled the raisins. Oh, and I was out of cinnamon so had to use pumpkin pie spice... not as sweet as the cinnamon but still very good.

Blueberry Nut Oat Bran Muffins

I love this recipe! It's a great recipe to experiment with. I switched the blueberries for cranberries and nixed the nuts and they were so good. I've also put in mango instead of the blueberries. I love the fiber in these--plus they're delicious. They don't taste as healthy as they really are.

This recipe was very easy! I don't have a stand up mixer so I was nervous but hand kneading wasn't as bad as I thought. Next time I think that I will make them longer though.

Five Pepper Hummus

This was a HUGE hit!! The first time I made it, I left out the banana peppers and garlic and cut the cayenne and black pepper in half. It was alot prettier and not as spicy but the 2nd time I followed the recipe and it was so good. Very, very spicy but so flavorful!

Pumpkin Chocolate Chip Muffins

I thought that the original recipe was pretty good but the second time I modified it and liked it alot more (plus it was healthier). I substituted white sugar for brown sugar, I used whole wheat flour instead of white, I used an egg substitute instead of the eggs (2 T flax seeds blended with 6 T water for 3 minutes) I also added some walnuts. I also made both muffins and bread out of each batch and the bread was excellent!

Oat Bran Health Bread

This was very good. I followed the ingredients exactly and it came out very good-very soft in the inside. The outside is alittle "hard" but not too bad. This bread tasted great with honey alone or with a chicken sandwich. Thanks!
