Beef Nacho Casserole

I tried this recipe but made a few alterations. First, I substituted ground beef with ground turkey. Always a healthier choice. Then I replaced chili powder with 2 tbsp. of taco seasoning. I also reduced the salsa to 1 cup & added 1 can of black beans in with the corn. Instead of 3/4 mayo I used 1/2 cup of sour cream & 1 heaping tbsp. of mayo. Once complete, this was really easy to make and so good! I totally loved it! My husband said it tasted like Nachos Grande. It's also is a good recipe if you have broken up pieces of nacho chips left at the end of a bag. I found the smaller more crumbled up pieces filled it in great. Thanks for the new recipe!

Lasagna Alfredo

Overall this was pretty good. Somehow I only managed to buy 1 jar of alfredo sauce, so I ended up 1/2 ing the recipe, which turned out to be plenty for a family of 5...with leftovers!

Amazing Crusted Chicken

If you have kids, this will be a good recipe to try out. My son thought it looked sort-of like chicken nuggets because of the orange color, so he was much more inclined to be enthused about this dish. The chicken was good, but unfortunately I ran short of the french fried onions, so I will have to make it again to get an accurate read on the recipe. But, we liked it...even without the onion flavor (but I have a feeling with that added it will be even better!)

Rosemary Au Gratin Potatoes

I thought his turned out pretty good. Although, I didn't have any fresh rosemary on hand so I had to substitute it with dry. I bet it would have been better with fresh. I also added about 2/3 cup parmesean to the sauce portion so that the dish would be cheesier as we LOVE cheese. It smelled super good while in the oven too!!!!

California Cherry and Walnut Salad

I pretty much stuck to the recipe, except I just didn't use chicken because I don't care for meat on my salads. Great meal to have while watching calories. Quick to whip up too! Yum!

Mediterranean Stuffed Chicken

My husband & I both thought the dill overpowered the cheese mixture. I would definitly suggest cutting back on the dill. Other than that, I found the recipe pretty easy to make. I like recipes with not too many ingredients or steps. Keeping it simple for my busy life!

California Kabobs

The marinade was really good, although I tripled it so that I could also soak the vegi's in the sauce. I also omitted the mushrooms (we don't care for those) and added broccoli, squash & zucchini. I will surely make this recipe again this summer!

Ambrosia Salad

I did change up this recipe quite a little bit. I just used regular flavor marshmallows instead of the flavored, but next time I think I will do the fruity marshmallows. I also added a little mayo too. Maybe 1/2 cup. Also I added a small can of marashino cherries (cut in half.) And about 1 cup of chopped walnuts as well. I chilled a good long time (approx. 6 hours...the longer, the better.) This was good. Great for an occasion with kids!

Red, White and Blue Strawberry Shortcake

I pretty much made this festive cake, except I used angelfood cake. Although the angelfood made the cake really airy & refreshing, I didn't exactly have the proper sized pans because it won't cook in 1 "standard" 9x13 cake pan. I improvized by using 2 loaf pans, so my rectangle flag was a little square shaped. So, just be aware that if you want to go with angelfood, just check your pan sizes ahead of time. Delicious Ham and Potato Soup

This was a really tasty treat. I would suggest cutting back on the pepper, because I thought 1/2 tsp was too overpowering. 1/4 tsp would be plenty in my opinion. I also substituted 1 cup milk with 1 cup heavy cream. I wanted to make the soup creamier and also I had some cream leftover that I didn't want to waste. I also increased the celery to 1/2 cup. That was a good call. More would have been fine too. I also doubled the amount of ham because I was serving this as the main meal for my family. Really great flavor, I will make this again, but with less pepper next time!

Chocolate Almond Bark

I didn't think the almonds needed to be roasted before hand. I thought it just gave the bark a weird taste when it was finished. Next time I will try just coarsly chopping my whole almonds and dropping them in. I also thought the recipe should have been doubled.

Pumpkin Cheesecake II

I can't think of any complaints with this recipe. The crust was especially good! I made it exactaly as the recipe called for only omitting the lemon juice & 1 spice that I didn't have. I was actually a little surprised that it came out so well because I live in a high altitude climate, so sometimes baking can be qite challenging...but it came out PERFECT...no cracks whatsoever!

Broccoli Chicken Casserole I

All 3 of my kids said they liked it, yay! That's really the ultimate goal for me. I didn't plan this recipe ahead of time, so I just used what I had on hand. So, I swapped frozen broccoli for fresh. Then I also added a can of cheddar broccoli soup because it seemed like it needed more "sauce." I also substituted sour cream w/ mayo because i didn't have any mayo on hand. I was able to whip this up ahead of time and then take my kids to sports and still have dinner ready to go afterwards....which is so great for busy parents!

This recipe was fine, but nothing too special. If I made this again, I would definitly add some pine nuts...it lacked something, maybe crunch? But I don't think it impressed me enough that I would make it again.

Broccoli Chicken Roli

I will definitly make this again! To simplify a bit I just made it in a basic rectangle shape and used 2 cans of croissants; 1 on the bottom, & 1 on top. I also used 1 heaping tablespoon of horseradish-mustard, because I didn't have dijon. This tasted great!

Stuffed Green Peppers I

The recipe called for 2 cans of soup. I only used one, and it definitly did not need more than one. I would also suggest adding more rice, I thought it could have been ricier. Overall, I really enjoyed it, but my husband thought it was bland (he's crazy) and my kids 2, 5, & 8 didn't like it either. But I did!

Potato and Egg Casserole

This recipe is pretty time consuming, so I don't know how often I'll actually make it in the future. I followed the directions for the most part & boiled the potatoes a little longer (about 22 minutes) as other reviewers had suggested. But my husband still thought they were a wee bit hard, (I thought they were fine.) I also cut the margarine to 1/2 cup as well. I added a little bacon to make it more of a main course meal, but my hubby thought it was more of a breakfast dish. It was good, I liked it.

Easy Quiche

I had a leftover pie shell so I decided to pour the mix into that and it was pretty good. I also substituted turkey-ham for pork ham & added green onions, salt and pepper and it turned out delicious!! I was really glad I added the green onions & spices because it really gave it nice flavor. It was very easy to whip together and I quite enjoyed it! I'm adding this to my recipe book for sure!
