Crabby Cream Cheese Wontons

Reviewed: Jan. 22, 2008
THERE WERE TOO MANY SAUCES IN THE FILLING. THEY WERE NOT NECESSARY AT ALL! I AM GOING TO TRY THESE AGAIN, BUT ONLY ADD THE: CREAM CHEESE, GARLIC, & GREEN ONION (I'D KEEP THE CRAB, BUT I DON'T EAT SEAFOOD.) BY DOING THIS I HOPE TO RETAIN THE INTEGRITY OF THE CREAM CHEESE FLAVOR. ALL OF THE EXTRA SAUCES ARE JUST TOO OVERPOWERING. MY HUSBAND THOUGHT THE WON TONS TASTED LIKE THEY WERE STUFFED WITH FRENCH ONION DIP. HOPEFULLY WITH THE REVISIONS THEY WILL BE GREAT NEXT TIME AROUND.

Beef Nacho Casserole

Reviewed: Dec. 11, 2007
I tried this recipe but made a few alterations. First, I substituted ground beef with ground turkey. Always a healthier choice. Then I replaced chili powder with 2 tbsp. of taco seasoning. I also reduced the salsa to 1 cup & added 1 can of black beans in with the corn. Instead of 3/4 mayo I used 1/2 cup of sour cream & 1 heaping tbsp. of mayo. Once complete, this was really easy to make and so good! I totally loved it! My husband said it tasted like Nachos Grande. It's also is a good recipe if you have broken up pieces of nacho chips left at the end of a bag. I found the smaller more crumbled up pieces filled it in great. Thanks for the new recipe!

Delicious Baked Chicken Kiev

Reviewed: Nov. 30, 2007
This was good; I will surely make this again. My only confusion came when the recipe called for honey sweetened corn flakes. I found regular plain corn flakes & sugar corn flakes (like Frosted Flakes) so I wasn't sure which to get. I opted for plain Corn Flakes & it was good...but still I'm not sure I got the "right" one!

Corn Casserole

Reviewed: Nov. 5, 2007
This wasn't too bad...my husband really liked the flavor, but not so much the consistency. I personally thought it was a little too oniony & maybe that was becase I didn't chop them up finely enough. Nice side dish.

Chicken and Ham Casserole

Reviewed: Nov. 5, 2007
I thought this was pretty good! The only problem for me was that I didn't have any leftover chicken, so I had to cook some up & that added a lot to my overall cooking time. (It probably ended up taking me 1 hr & 15 minutes to get this ready....that's a little long with children running under foot.) I doubled the recipe & also added some green onions that I had handy & that gave it nice flavor. Also I substituted turkey-ham for pork-ham. This was a good all around casserole for dinner & my 2 year old even ate it!!

Grandpa's Popcorn Balls

Reviewed: Nov. 1, 2007
These came out o.k. but my problem was that the balls didn't get evenly enough coated with the glaze. Someone suggested to use 5 bags of popcorn & that was too much. I'd start with 3 bags & add 4 if it needs more. Also, the balls set up so fast that I would highly recommend having another person helping shape balls because the time before set-up is so limited. I took another persons suggestion & shaped them in the sink which worked great. I also took another persons suggestion & made jack-o-lanterns out of them by adding orange food coloring, tying them with green pipecleaners, an drawing faces on the wrappers. They were cute, but a little tough to draw faces because of the bumpiness. Finally, i didn't have a candy thermometer, so I used ANOTHER persons suggestion & used the ice water method to test the glaze and that worked greaT!!!!

Quick and Easy Mexican Chicken

Reviewed: Oct. 24, 2007
I was feeling very lazy, so I substituted the garlic, salt & pepper with taco seasoning & it still turned out pretty good. It was also very easy to prepare & I had all of the ingredients on hand!

Pumpkin Cheesecake II

Reviewed: Oct. 22, 2007
I can't think of any complaints with this recipe. The crust was especially good! I made it exactaly as the recipe called for only omitting the lemon juice & 1 spice that I didn't have. I was actually a little surprised that it came out so well because I live in a high altitude climate, so sometimes baking can be qite challenging...but it came out PERFECT...no cracks whatsoever!

Chicken and Potato Parcels

Reviewed: Oct. 3, 2007
I made this recipe as suggested by others, by cutting the potatoes smaller & even precooking them a bit & they were STILL undercooked. The chicken was dry. And the bbq sauce didn't taste good with any of the veggies except the celery. No one in my family liked this dinner, including myself. I won't be making this one again! Sorry!

Pesto Cheesy Chicken Rolls

Reviewed: Sep. 28, 2007
This was pretty good, but if I make it again I would definitely add some pine nuts to the pesto for some added crunch. Also, I didn't have mozarella on hand so I used Swiss, but I would be sure to stick to mozarella next time because the Swiss didn't have as much substance and seemed to be less flavorful.

Zucchini Casserole I

Reviewed: Sep. 21, 2007
This recipe was pleasatly surprising! After I mixed up the ingredients & poured it into a casserole dish, it wasn't looking too appetizing & I was having second thoughts. But after tasting it, I am now officially adding this meal to my cookbook. I did however add sausage to make this more of a "maindish" and thankfully I did, because my husband also agreed that this was a good dish! I think next time I prepare this I might add some parmesean cheese to the stuffing mixture. Also, the prepping time was more like a half hour for me. I would rate this 4 & 1/2 stars. (if a 1/2 star was an option.)

Triple Threat Fruit Smoothie

Reviewed: Sep. 21, 2007
Great consistency, I liked the seedy gritty texture from the berries. It was really yummy! I changed the ingredients up a bit by adding banana instead of kiwi and adding blackberries & respberies as well. But will keep trying different combo's. Very good! A new breakfast must have.

Rosemary Au Gratin Potatoes

Reviewed: Jul. 26, 2007
I thought his turned out pretty good. Although, I didn't have any fresh rosemary on hand so I had to substitute it with dry. I bet it would have been better with fresh. I also added about 2/3 cup parmesean to the sauce portion so that the dish would be cheesier as we LOVE cheese. It smelled super good while in the oven too!!!!

Slow-Cooked Tamale Casserole

Reviewed: Jul. 2, 2007
This was pretty tasty, but a little spicy for my taste. I would give 3 1/2 stars if there was a half star.

Black Bottom Cupcakes I

Reviewed: Apr. 2, 2007
What an ordeal! The first time that I made these I started out with 6, and didn't care for the taste of the cake. So i decided to re-make them with a box cake mix thinking they would taste better this time. Unfortunately, instead of mixing up a cake mix I mixed up a brownie mix. Oops! So, on the third try everything finally went well but they just weren't as good as I had expected. My friend once made something like these that were delicious and I've been searching for the recipe ever since, but I still haven't found it & it certainly isn't this. I've come to the conclusion that this recipe is cursed!! BEWARE!!

Three-Cheese Spaghetti Bake

Reviewed: Feb. 7, 2007
What a nice change from boring old spagetti! I don't think that my husband thought that it had enough sauce though. But I liked it more cheesy & less saucy personally. I'd actually give it 3 & 1/2 stars, but they don't give you the half star option.

Monkey Bread I

Reviewed: Jan. 28, 2007
I thought this was pretty good. I'm so glad I read other reviews before I made it; because it dripped a lot & if I hadn't been warned ahead of time I would have had a big mess in my oven! I also knew ahead of time to make extra sauce to pour on top afterwards...it definitly needed more. My only complaint was that the sauce didn't taste too "carmely"...it was more "brown-sugary." (But it was still good.) To help it be more carmely I add corn syrup and that seems to do the trick!

Easy Quiche

Reviewed: Jan. 24, 2007
I had a leftover pie shell so I decided to pour the mix into that and it was pretty good. I also substituted turkey-ham for pork ham & added green onions, salt and pepper and it turned out delicious!! I was really glad I added the green onions & spices because it really gave it nice flavor. It was very easy to whip together and I quite enjoyed it! I'm adding this to my recipe book for sure!

Artichoke Chicken

Reviewed: Jan. 24, 2007
I really liked the chicken, I would have given it 4 & 1/2 stars, but my husband thought the artichoke topping was too rich & ended up scraping off. He did eat the chicken as it was very moist under the artichokes. I did add 1/2 cup sour cream as suggested by other reviewers. So, even if my husband isn't nuts about this it's going to have to growon him because I thought it was really tasty will make this again!
