Toasted Pumpkin Seeds

My 6 year old son made this (with my help ofourse.) He loved them & gobbled them all up before the rest of the family even had a chance to give them a taste. What a great Halloween memory to savour!

Pumpkin Ginger Cupcakes

Nice fall recipe! I didn't have crystallized ginger or cloves, so I added a little nutmeg to even it out. The cupcakes came out nice & moist even baking at a high altitude. I topped with a cream cheese frosting & then sprinkled with cinnamon sugar for a touch of pretty. They tasted even better the next day after the frosting had stiffended up a bit.

Pesto Chicken Florentine

This recipe was fine, but nothing too special. If I made this again, I would definitly add some pine nuts...it lacked something, maybe crunch? But I don't think it impressed me enough that I would make it again.

Red, White and Blue Strawberry Shortcake

I pretty much made this festive cake, except I used angelfood cake. Although the angelfood made the cake really airy & refreshing, I didn't exactly have the proper sized pans because it won't cook in 1 "standard" 9x13 cake pan. I improvized by using 2 loaf pans, so my rectangle flag was a little square shaped. So, just be aware that if you want to go with angelfood, just check your pan sizes ahead of time. Happy 4th of July!!!

Black Bean and Corn Quesadillas

Even my husband who is a meat-a-tarian really enjoyed this. It was really easy to make, which is great for me. I served it with corn bread & spanish rice & it made a great family meal.

California Cherry and Walnut Salad

I pretty much stuck to the recipe, except I just didn't use chicken because I don't care for meat on my salads. Great meal to have while watching calories. Quick to whip up too! Yum!

Broccoli Chicken Roli

I will definitly make this again! To simplify a bit I just made it in a basic rectangle shape and used 2 cans of croissants; 1 on the bottom, & 1 on top. I also used 1 heaping tablespoon of horseradish-mustard, because I didn't have dijon. This tasted great!

Lasagna Alfredo

Overall this was pretty good. Somehow I only managed to buy 1 jar of alfredo sauce, so I ended up 1/2 ing the recipe, which turned out to be plenty for a family of 5...with leftovers!

Delicious Ham and Potato Soup

This was a really tasty treat. I would suggest cutting back on the pepper, because I thought 1/2 tsp was too overpowering. 1/4 tsp would be plenty in my opinion. I also substituted 1 cup milk with 1 cup heavy cream. I wanted to make the soup creamier and also I had some cream leftover that I didn't want to waste. I also increased the celery to 1/2 cup. That was a good call. More would have been fine too. I also doubled the amount of ham because I was serving this as the main meal for my family. Really great flavor, I will make this again, but with less pepper next time!

Stuffed Green Peppers I

The recipe called for 2 cans of soup. I only used one, and it definitly did not need more than one. I would also suggest adding more rice, I thought it could have been ricier. Overall, I really enjoyed it, but my husband thought it was bland (he's crazy) and my kids 2, 5, & 8 didn't like it either. But I did!

Amazing Crusted Chicken

If you have kids, this will be a good recipe to try out. My son thought it looked sort-of like chicken nuggets because of the orange color, so he was much more inclined to be enthused about this dish. The chicken was good, but unfortunately I ran short of the french fried onions, so I will have to make it again to get an accurate read on the recipe. But, we liked it...even without the onion flavor (but I have a feeling with that added it will be even better!)

King Ranch Chicken Casserole I

My suggestions to improve this would be: cook at a higher temp, maybe 350 for a longer amount of time. Maybe 30 minutes instead of 20. We thought it was luke-warm and definitely could have been hotter. I boiled the chicken, but next time I'm going to pan fry it with seasonings to make the chicken more flavorful. This dish tasted great though. I will make this again for sure.

Mediterranean Stuffed Chicken

My husband & I both thought the dill overpowered the cheese mixture. I would definitly suggest cutting back on the dill. Other than that, I found the recipe pretty easy to make. I like recipes with not too many ingredients or steps. Keeping it simple for my busy life!

Caramelized Baked Chicken

First I would suggest if you want "sticky" chicken, then follow other reviewers suggestions for thicker sauce. If you follow the recipe as it is, only one side will be sticky. The sauce just rolled off my drumsticks as I poured it on. Second, Even though I put down tin foil, the sauce stuck badly to my pan. I was not happy about that. The smell after about 20 minutes was not pleasant. Although it tasted fine (my husband actually quite enjoyed it) it was definitly not a keeper in my opinion.

Ham and Swiss Casserole

I pretty much followed the instructions on this one although I did amp up the portions to make it serve more. I increased the milk, added a can of cream of mushroom soup in place of the mushrooms, and also added peas. The best suggestion I could make is to cover the casserole w/ aluminum foil because the top of mine was a little dried out when I took it out of the oven.

Vegetable Pizza I

I really didn't change much when making this, it was great! I just substituted cucumbers in place of tomatoes because I don't personally like them. I also cut back to 1 package of cream cheese, because it made plenty of "sauce" with 1. And I also didn't use the entire ranch packet. I will make this again for sure...it's a keeper!

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

I don't know if it's really fair that I rate this recipe, because I didn't stick to the direction whatsoever. The directions just looked too long & complicated for me, so I just did it my own way. First, I cooked the chicken in olive oil, garlic, salt & pepper. Once lightly browned I added pine nuts & sun dried tomatoes and simmered together. In a seperate pot I added 1 pint of heavy cream, 1/2 a jar of pesto, & between 1/2 cup & a cup of swiss cheese and boiled together. Then I boiled the penne for 10 minutes, then drained. Next I added everything together in a big pot & stirred. Viola! That was it. Much simpler by my standards. If this had been served to me in a restaurant, I would have been very pleased.
