Connie's Zucchini "Crab" Cakes

Excellent! We've made them twice so far in the last few days and can't get enough. We get vegetables from our garden and a local co-op, and we've had a lot of zucchini of late that we needed to try something new. Thankfully I found this on here! To change things up, we made a batch with grated carrots mixed in and another one with equal parts grated yellow squash and zucchini, along with chipotle powder, chopped onions, garlic scapes, and even a grated radish. We made them for guests and had them topped with tartar sauce... our guests gobbled them right up! A great recipe as is, and even better when you find other combinations that work well when you want to change it up. Looking forward to trying these leftovers topped with an egg in the morning!

Maria's Broccoli Rabe

Delicious! I usually hate Broccoli Rabe and I couldn't stop eating this. I love making this. Last night, ended up doing some experimenting as well. Fried up some bacon while the b.r. was boiling. Removed the bacon when it was *almost* to the point we like it, and then sauteed chopped garlic and onion in the bacon grease. Added the drained b.r. to the pan and sauteed. When the b.r. was just about done, added the bacon back and finished cooking everything. Added the parm while in the pan and mixed up a bit then served with extra on the side. can't wait to do this again!

Pudding Shots

Love this over using gelatin! I half tried this recipe but used our own twist after learning the trick from a local farmer: Instead of chocolate pudding, we used a black sapote (aka chocolate sapote) fruit which has the consistency and taste of chocolate pudding and mixes deliciously with the liquor. Will definitely make it again for Christmas this year.

Chunky Chicken Noodle Soup

Used this recipe as the basis for the soup I just made my family. My father just got out of the hospital and has to eat a more strict diet, so I've been making everything from scratch this week. I used the low-sodium chicken and vegetable stock I made yesterday instead of bouillon, added in some broccoli, cauliflower, and green peppers, and also used Bucatini instead of egg noodles (only because I didn't have any on hand). The house smells delicious and just cooking it made everyone hungry. Glad to use this as a great base for many different types of soups from here on out. Next time I have all the ingredients as written I will definitely write another review. Very glad to have another chilly day here in Florida so we had another excuse to make some soup. :-)
