Seminary Muffins

I used whole wheat flour, used about half the salt, added a bit of nutmeg and ground flax seed, left out the nuts (becuase of my kids) and chocolate chips - outcome was a great tasting, healthy muffin. I also mixed the oatmeal with the applesauce and let it sit for maybe 30 min first, helped soften/breakdown the oatmeal some so it wasn't as noticable in the muffin. My 17 mo old twins loved them, too :-) Thanks for sharing, definatly a keeper recipe!

Southwestern Bake

Easy and filling. We like ours rolled up in whole wheat soft tortillas. Per other suggestions, while browning the meat with the garlic and onion, I added a few dashes of taco seasoning. I used only 1 can of reduced sodium black beans, and maybe about 10oz of frozen corn, only 8oz sour cream (all I had of those). I mixed in some more dashes of taco seasoning in the whole mix. Layered 1/2 mixture, chips (just enough to cover layer), about 1 cup cheese, other 1/2 mixture, then another cup cheese. Turned out great!

Henry and Maudie's Oatmeal Cookies

So easy to work with, very good! Like other reviewers, changed a couple things. Used 1/2c butter and 1/4 applesauce, little under 1c br sugar, 1/2 tsp cinnamon, few dashes nutmeg, and a coarsly shredded apple.. so then only added a little water because of that. Also added just a few sprinkles of mini-choc chips.. Yum!

Slow-Cooker Pepper Steak

Chicken with Peas and Quinoa

I am not a big fan of quinoa, I've tried to cook it a few different ways.. this was the best I have done. I cut up bnls skls chicken breast and let it sit in some evoo, garlic, minced onion, paparika and a little black pepper for about 30 min. Used 1c broth, per other reviewer, and Prego "Chunky Garden- tomato, onion and garlic". Had to cook longer for my quinoa to be done.. but good, easy dish. Sprinkled grated parm on top.

Fantastic Lemon Butter Fillet

I never cook in butter, I try to be healthy.. but I caved on this one and holy cow was it good. I did not add salt, added dill. Cooked at 375 20 min, uncovered and baked another 10 min. Keeper!

Playgroup Granola Bars

Adding pumpkin is good! Per other reviewers and my own changes - cut br sugar to 1/2c, more cin to 1 heaping tsp, more vanilla to 1 tbs, for the 1/2c oil, I used 1/4 oil and 1/4 applesauce. Used 1/2 ap flour, 1/2 ww. 1c quick/instant oats, about 1 1/2c reg rolled oats. 1/4 tsp nutmeg and a few dashes clove. 1c pumpkin. Didn't have wheat germ, so used 1/2c milled flax seed. Baked only 20 min. Yum! *update, also tried 1/4 oil 1/4 applesauce, then extra 1/2c applesauce ..and about 1 cup/2 apples cloarsly shredded with everything else as above (except pumpkin).. awesome stuff

Honey Chicken Stir-Fry

Love this recipe, have made it several times. I marinate the chicken in some evoo, a little soy, splash of oj, pepper, garlic, onion. I cook the frozen veggies in the microwave to save time (while rice and chicken are cooking). I use the tips of adding a little ginger and cayenne, and of using oj instead of water with the cornstarch.

Blueberry Zucchini Bread

Yum! I health-a-fied it up some, too. Used 2 c ww flour and 1 c ap flour. Used 1 c br sugar and 1/2 c white. Replaced 1/2 the oil with applesauce. Sprinkled in some nutmeg. And I even put in some shredded yellow squash that I needed to use up. Made muffins with the same temp, at 20-25 min like another reviewer suggested.

Banana Crumb Muffins

Made a few healthy changes- Used all ww flour, cut white sugar to about 1/4 - 1/2c, added about 1/4c brown sugar (to batter). Added maybe 2 tsp cinnamon, 1/2 tsp nutmeg and 1 tsp vanilla. Used coconut oil in place of butter. Added something like 1/2c applesauce since it seemed dry (probably from my changes). I did not even make the crumble topping.. which I am sure is fantastic. Very happy with these!

Oven Brown Rice

VERY good, for sure a keeper. I added some diced carrots and frozen broc florrets (they turned out a little mushy, but oh well).. I took the advice of another review and used two cups of instant brown rice (I didn't have reg) and it worked out just fine. Also used garlic powder instead of garlic salt.. and used 1/2 the seasoning salt.. and covered with foil during baking. Next time I might add a splash of worcestershire sauce.. but over all, yummy!

Apple Crisp II

This was great! I made this yesterday to take to a party last night, I am so glad I picked this recipe (I've never made an apple crisp before). It was one of the first desserts gone! My little changes were : Only used 1/4 c water, cut white sugar down to maybe 3/4 c, added a little vanilla and couple shakes of cinnamon to the topping. Added a little nutmeg to the apple mix, which I shook all that up with the apples instead of sprinkling on top. Still have apples left and thinking about making again :)

Yummy Honey Chicken Kabobs

Used evoo instead of veg oil. Great marinade! Let it soak for about 4 hrs. Didn't marinate the veggies I used, just coated them with evoo. Also used minced garlic (all I had on hand).

Pumpkin Bars I

I have made it just as written several times, always a big hit. I bake it in a sided cookie sheet (takes 18-20min), like other reviews. This time I wanted to adjust it to make it healthier (for just my family). Used 2c ww flour, little under 1c sugar and added a little br sugar. 1/2 oil and 1/2 applesauce. Added some nutmeg, little clove, heaping tbs milled/ground flax seed. Only used 3 eggs. Then threw in some mini choc chips :) Not nearly as good as the original, but my young kids don't mind.

Coffee Shake

Very good, and so easy (AND much more cheap than a fancy coffee shops!) I used a little less sugar, but followed the suggestion of adding mini-chips. I also added some more ice and instant coffee. No matter what you do, this is great. I made a little to much, so I put the extra in the freezer (maybe 20 min), then decided I wanted the rest, and by then it was nice a slushy.. even better :)

Hamburger Potato Casserole

Awesome comfort food :) I added some extra seasonings (when cooking the meat), added a big spoonful of sour cream, and some shredded ched to the soup mix (I think next time I will add a little less milk because of that). I quarter sliced the potatoes so they would be easier to eat for my toddlers. And I covered with foil.. will make again for sure.

Crunchy Oven Fried Tilapia

Pretty darn good. I thought it was as close to fried as you could get for baked. I added more seasoning/spices, even dill in with the cornmeal. Used foil to line cookie sheet, baked 10 min, then put in broiler for 1-2 min.

Love recipes that you can make even healthier and they still taste good. Used 2c ww flour and 1.5c ap, 1/2c applesauce and 1/4 oil, 1/2c sugar, maybe 1/2c br sugar?.. added 1/4 tsp nutmeg and 2 heaping tbsp ground flax seed. Made into muffins, baked for around 25 min.. good stuff, kids are happy! (left out cranberries and nut, didn't have any)

Applesauce Oatie Cookies

Delish! I modified a little to make a bit more healthy of a snack for my 18 mo old twins, and used 1/2 c reg flour and 1 c whole wheat flour. Used 1/2 tsp additional cinnamon, a little vanilla, about a spoon full of vanilla yogurt (I thought it looked a little dry), and left out the chocolate chips, nuts, and raisins. A keeper recipe. *edit* Just made these with a small chopped up apple (about a cup).. it is a wonderful replacement if you don't use raisins. I also added a dash or two of cloves.. these are still one of my favorites to bake :)
