About this Cook
I am a newlywed, fur mom of two. I work full time, so the slow cooker is my best friend. My husband is extremely picky, making cooking an adventure. I have some health issues, so I've had to drop red meat from my diet, which on top of adventure, makes cooking a challenge. My mom did a great job teaching me how to adapt when in the kitchen and I'm slowly tapping back into that.
My favorite things to cook
BBQ anything! I also do starches very well. My first love, though, is baking and I've already baked my way through one bread machine.
My favorite family cooking traditions
My father is Puerto Rican and my mother is German, so holidays always had way more food than most peoples. My mom always did an all out traditional, American Thanksgiving and then we always had food that she and my dad grew up with.
My cooking triumphs
I recreated my mom's potato soup without her recipe! Growing up, mom's potato soup was my one true comfort food and since she's moved so far away, I don't get it anymore. Well one day I just go so homesick, I had to have it. And I made it!
My cooking tragedies
I was defrosting some chicken in a plastic dish in the oven because we'd been having some ant issues. I was putting together a side dish to put in the oven and forgot the chicken was in there. 450 degrees later, my chicken was half way done and there was a large hole in my plastic dish. There was much thumping of the head against the counter.

BBQ Pork for Sandwiches
When I first opened the slow cooker to shred the pork, I was like "oh great another recipe wasted." But like the directions say, it will seem like it's not working but it does. I just pulled it apart by hand. Next time, I will trim the meat also, but that's a reflection on my abilities, not the recipe. Very easy to put together and can reflect different flavors based on what kind of BBQ sauce the cook likes.

Quick Tuna Casserole
Best go to recipe ever. Sometimes I top with just a sprinkling of bread crumbs, sometimes I don't. Either way, it's amazing.

Kathy's Delicious Whole Slow Cooker Chicken
Very good. I used two bone-in half breasts and adjusted the recipe for smaller size. This was fall off the bone fantastic. Loved the flavors. Would definitely make again.
