Sicilian Lentil Pasta Sauce

I followed the recipe as written but added about 1/2 pound Italian sweet turkey sausage (cooked) and also added a can of mild Rotel (omitting the water) when adding the tomato sauce and paste. Also added 1/2 of a red bell pepper (chopped) to the veggies (mushrooms, garlic and zucchini). Took it from 4 1/2 stars to 5!!! Loved it as has everyone I've served it to!!

Fast and Delicious Black Bean Soup

A delicious and oh-so-easy black bean soup. I did not use carrots nor ham, but followed the recipe exactly as is, adding the juice of about 1/2 lime (which, to me, was a critical ingredient!). Also what makes this soup SO good are the toppings: I had bowls of sour cream, shredded cheddar, cilantro and fresh salsa for adding as desired. Simply delicious when all are added!! This soup is even better the next day.

Easiest Eggplant

This was really good as a side dish . .loved the idea of additing a bit of cayenne to the mayo for that extra kick! But the leftovers were even better!!! Placed the eggplant slice on a toasted english muffin half, topped it with a slice of tomato, mozzarella cheese and some fresh basil. Back in the oven to melt the cheese. Delish!!

Dave's Low Country Boil

What a great recipe! I totally agree with the recommendation by a previous rater for the Old Bay/water mix (3/4 c. Old Bay to 6 quarts of water). It was perfect. Our group raved about the sausage (I think it was even preferred over the shrimp!), so we'd recommend adding a little more than the recipe calls for (we used Polska Kielbasa which was previously sauteed before adding to the pot). Bottom line: don't skimp on sausage!! Only change we'd do would be to cook the corn just a little longer. The time recommended in the recipe for fresh corn just didn't make it tender enough. Add maybe 2-4 minutes of corn cooking time. Also, adding the lemon and onion (as another reviewer recommended) was the right thing to do. Other than that it was simply wonderful!!! A highlight of our weeklong family vacation to the beach! Thanks for a great recipe!!! The Martin/Pressley clan!

Brazilian Black Bean Stew

Would never have tried this recipe had it not been for all the wonderful reviews. Everyone was right! It is a definite keeper as well as being easy and economical to make. I did not use the hot pepper as indicated, but instead used one can of diced tomato with chili peppers and a second can of Rotel. I also used Sweet Italian Style Chicken Sausage which was low in fat and tasted delicious! Thanks for a GREAT recipe!!!

Grilled Shrimp Scampi

A definite favorite!! The marinade is so easy to prepare and can be done ahead of time. Instead of making kabobs, we used a grilling basket and cooked shrimp on the grill til it turned pink. Served over linguini with the following sauce: Saute together 1 stick butter, juice of 1 lemon, 1 T minced garlic, 1/4 cup vegetable oil, 1 T (or more to taste) red pepper flakes and a spash of white wine. Simply delicious!!!!!
