I'm a student, wife, and a director of youth ministry in St. Paul MN. I love to read, watch movies, knit, hang out with friends, play board games, and of course - eat tasty food! My husband also loves to cook...but our little apartment (student housing, ugh) restricts us on what we can do. But, we do what we can and have fun!
My favorite things to cook
I don't know if it's the Minnesota way of life getting to me, but I really do like casseroles! They are easy and you can really be creative. I also really like to make comfort food (the southern side of me). I have a soft spot for creamy and rich dishes. I've also recently become obsessed with asparagus! Desserts are always fun too - baking can be so meditative and therapeutic.
My favorite family cooking traditions
My mother owned a restaurant in Texas when I was a baby. She specialized in southern 'homestyle' cooking - country fried steak, chicken and dumplings, etc. My mom always made things from scratch, even things as simple as sloppy joes. I didn't even TRY manwich until a month ago!
My cooking triumphs
I've become really great at following recipes, or making due when I don't have something on hand. One of my favorite recipes that I started to make was swedish meatballs and gravy. They are always a HUGE hit, whether they are served with mashed potatoes (my fave) or noodles (hubbys fave).
My cooking tragedies
One time I tried to surprise my husband with breakfast. It was about a month after we moved into our apartment, and I wasn't quite used to cooking with gas - it heats up so fast! I had the pans too hot and absolutely OBLITERATED the bacon while trying to balance them with the pancakes. The smoke set off the fire alarm, leaving the 'surprise' of breakfast a bit shocking!

Penne with Chicken and Pesto
WOW this was so good, and a huge hit for an evening with friends. my friend isn't so big on super creamy, so i substituted the chicken stock for half of the cream and low fat half and half as I heard from others - but it ended up a little on the runny side. i added some flour and it turned out perfect and stuck to the insides of the rotini noodles i had on hand. the pesto, parmesan, garlic and cream combo is so wonderful and delicious! we're adding this to our rotation for sure.

Apple Crisp IV
It was the crunchiness I was looking for, and the subtle sweetness that apple crisp should have! I scaled it down to only 6 servings, and it was still wonderful. It was so easy too! Between the amazing taste and ease of this apple crisp, I'll never try another recipe. I've found my favorite.
