Spaghetti Squash I
We loved this. I sauted red onion, green pepper, zucchini, and cherry tomatos in olive oil and a couple tablespoons of dry sherry. I tossed with klamata olives and fetta. Next time, I will drain off any excess juices from the veggies so it won't be quite so mushy.

Sweet and Sour Faux Meat Balls
Good texture, holds together well. I think I will try a savory sauce next time, it was too sweet & rich for me. I will also substitute egg beaters for the eggs & use lowfat cheeses. I think it would be good served over the top of boiled fresh green beens or carrots. I froze the leftovers and will use for future creations.

Baked Spinach
1 out of 2 kids loved this dish, my husband and I both loved it! I was skeptical if I was doing it correctly, but it turned out wonderful! I added green onions and some of the cheese part way through, and over the top. There were no leftovers, very yummy!
