Incredibly Cheesy Turkey Meatloaf

Wow, this was sooooo good and you'd never even know it was turkey! I used half the cheese and since I don't like ketchup, used worchestershire sauce instead. I just sprinkled it over the top before I put the loaf in the oven. My daughter's only four months old but I'm sure she'll love this when she's old enough!

Dave's Low Country Boil

Love this recipe! It's great because the way each ingredient goes in for a certain length of time makes it all cooked exactly perfectly. But 2 tbsp of Bay Seasoning? Puhlease! We used half a can.

Oatmeal Pancake

Every bit as yummy as regular pancakes. I used two whole eggs instead of only egg whites and topped them with sugar free syrup. Terrific!

Awesome Slow Cooker Pot Roast

Unbelievably simple, but that gravy is awesome! I used one can of regular cream of mushroom soup and one can of roasted garlic flavor. Next time I'll cut slits in the roast and stuff some garlic cloves down inside too. Soooooooo good!!!

Chicken Satay

Fabulous! The sauce was delicious and quick to make. I used an entire Splenda packet though - it wasn't quite sweet enough without the whole thing. I was too lazy to cut up the chicken so I just sauteed the breast and poured the sauce over the top. Worked great!

Baked Kale Chips

This is quite yummy as is, but I like it even more with grated parmesan cheese sprinkled on top one minute before it's finished cooking. My 7 year old eats this like it's candy! You seriously cannot imagine how good this is until you try it. You can play around with spice combinations too. Chili powder and garlic powder are both good on it too. Be SURE to line the cookie sheet. This seems to be the trick to getting it to crisp up nicely. You can try silver foil if you don't have parchment paper.

Sausage Brunch Casserole

This is so easy and so yummy! I make it on weekends, Christmas morning, or even use Crescent roll triangles pressed into muffin cups. Then you pour the egg mixture in and you have teeny tiny quiches.

Ginger Veggie Stir-Fry

Absolutely delicious! I brought it to a pot luck and my friends went nuts over it. I used broccoli, sugar snap peas, and julienned carrots. LOVE the ginger flavor! I really like that the veggies get tender without becoming mushy.

Coconut Curry Chili

The weirdest, most wonderful "chili" ever. I used one pound of turkey, chicken broth instead of water, and black beans instead of garbanzo beans because that's what I had on hand. I threw it all in the crockpot. It wasn't spicy at all so I stirred in a few spoonfuls of red curry paste. I'm thinking next time I might do only red curry and no green curry powder. I like it spicy. It's bubbling away right now and I'm going to garnish it with fresh basil when it's done, and maybe a squirt of lime juice too. I liked it with black and kidney beans - made it look like chili, even though it tastes nothing like regular chili.

Easy, delicious, uses ingredients I always have on hand anyway. The perfect recipe! I only soaked in salt water for 15 minutes because the kids were dying to eat some before bed and they were still wonderful.

I made a paleo crust from cauliflower and almond meal and used the rest of the recipe on top. It was fantastic and I felt so good about how healthy it was. I substituted arugula for the chives.

Lobster Tails Steamed in Beer

The beer changes the flavor a little but it doesn't scream "beer" so don't be afraid to try it. Easy, delicious! I used three tails for 8 minutes and it was perfect.

Super Sugar Cookies

I made one small change - I swapped out the vegetable oil and used coconut oil. Wow, they were fantastic!!! They tasted buttery, crispy, but with a little tropical twist. Highly recommended!

Roasted Chestnuts

This was really yummy! They were great right out of the oven. Yes, they're time consuming and my thumb was raw by the time I was done shelling them but hey, it's only once a year. They don't reheat well though - the next day the leftovers were pretty greasy.
