Ginger Veggie Stir-Fry

Absolutely delicious! I brought it to a pot luck and my friends went nuts over it. I used broccoli, sugar snap peas, and julienned carrots. LOVE the ginger flavor! I really like that the veggies get tender without becoming mushy.

Cajun Deviled Eggs

I tweaked this a bit and it was awesome. I don't like mustard so I left that out and I used Old Bay seasoning instead of cayenne pepper. I brought these to a party and they were gone within minutes.

Sausage Brunch Casserole

This is so easy and so yummy! I make it on weekends, Christmas morning, or even use Crescent roll triangles pressed into muffin cups. Then you pour the egg mixture in and you have teeny tiny quiches.

Beef Tenderloin With Roasted Shallots

This was not hard at all! My husband said this is the best thing I've ever made. The sauce is delicious, just like everyone says. I didn't have port so I used chianti and it was fabulous. I also added some boiled red potatoes to the pan when I put the fillets in the oven, and then poured the sauce over the whole thing. I think next time I'll add some garlic to the shallots. I think that would have made it a 5 star recipe.

Easy Key Lime Pie I

I thought something like this would be a lot more difficult to make! But it was a piece of cake and took no time at all. However, this was a little too tart for me. Some extra sugar next time and it will be perfect.

Grilled Asparagus

This is a good way to serve asparagus if you're tired of steaming. However, it's pretty bland. I also had the heat up too high and charred it beyond recognition. Next time I'd put some lemon pepper seasoning on it or something to jazz it up a little.

Lemon Pepper Zucchini

The lemon pepper flavors go really well with zucchini. The only thing I don't like is the texture when you bake it. It gets all shriveled up and wrinkly. I sautee it on the stovetop instead.

Incredibly Cheesy Turkey Meatloaf

Wow, this was sooooo good and you'd never even know it was turkey! I used half the cheese and since I don't like ketchup, used worchestershire sauce instead. I just sprinkled it over the top before I put the loaf in the oven. My daughter's only four months old but I'm sure she'll love this when she's old enough!

Gingered Chicken Breast

I felt like the marinade didn't make enough for all the chicken breasts so next time I'll probably double the ingredients for the sauce. But they turned out moist and lemony and were quite good! I'll probably add some herbs next time to give it a little more flavor.

Mocha Ricotta Creme

This just doesn't taste like dessert to me. It tastes like chocolate flavored lasagna filling. I was hoping it would be like tiramisu without the lady fingers but ricotta and marscapone are nothing alike. Oh well, maybe I'll try it again with more Splenda like others have suggested.

Chicken Satay

Fabulous! The sauce was delicious and quick to make. I used an entire Splenda packet though - it wasn't quite sweet enough without the whole thing. I was too lazy to cut up the chicken so I just sauteed the breast and poured the sauce over the top. Worked great!

Portobello Pizza

I used creminis (baby bellos) and put them in a circle to make the "crust." I also added some pesto and left off the tomatoes. They were very yummy, although nothing like a pizza this way. I will definitely make them again, although I'll use larger portobellos next time and more garlic.

Seafood Stuffed Avocados

These are really good for a light lunch. I omitted the cucumber, used cilantro instead of parsley, and added the chopped avocado in the mixture. I also added some spices to jazz things up a little because otherwise it's fairly bland. By experimenting with my ingredients and seasonings I've discovered a mixture that I really like. I've made these many times now!

Lower Fat Banana Bread II

I used Splenda instead of sugar and whole wheat flour. It was very good but a little dense and heavy, probably due to the flour. I gave it a four because I thought it could use some zing, maybe nutmeg or cinnamon.

Awesome Slow Cooker Pot Roast

Unbelievably simple, but that gravy is awesome! I used one can of regular cream of mushroom soup and one can of roasted garlic flavor. Next time I'll cut slits in the roast and stuff some garlic cloves down inside too. Soooooooo good!!!
