Candied Carrots

I've made this three times in two weeks. The kids LOVE them! If you cut them into small sticks like the recipe suggests, they do take 20 minutes to cook. If you chop them up smaller just start checking after 10 minutes or so. You must add the pepper! The sugar/pepper combination is amazing. It's not spicy but it just really adds something amazing.

Pear and Gorgonzola Cheese Pizza

I made a paleo crust from cauliflower and almond meal and used the rest of the recipe on top. It was fantastic and I felt so good about how healthy it was. I substituted arugula for the chives.

Brown Sugar Meatloaf

This was practically inedible to me. I used half the amount of brown sugar and it was still too sweet, and waaaaay too much onion. Didn't like it at all.

Roasted Garlic Lemon Broccoli

The flavors were wonderful but it was WAY too salty. I'll make this again for sure but use half a teaspoon of salt next time, if that. I also sprinkled grated parmesan cheese on top and thought that added a lot of flavor as well.

Easy, delicious, uses ingredients I always have on hand anyway. The perfect recipe! I only soaked in salt water for 15 minutes because the kids were dying to eat some before bed and they were still wonderful.

One Dish Chicken Bake

This was so easy and yet tasted fabulous! I used boneless/skinless chicken thighs and it was terrific. The only complaint was there was too much liquid for the amount of stuffing. Maybe I'll use a larger box of stuffing next time, or omit the milk.

Coconut Curry Chili

The weirdest, most wonderful "chili" ever. I used one pound of turkey, chicken broth instead of water, and black beans instead of garbanzo beans because that's what I had on hand. I threw it all in the crockpot. It wasn't spicy at all so I stirred in a few spoonfuls of red curry paste. I'm thinking next time I might do only red curry and no green curry powder. I like it spicy. It's bubbling away right now and I'm going to garnish it with fresh basil when it's done, and maybe a squirt of lime juice too. I liked it with black and kidney beans - made it look like chili, even though it tastes nothing like regular chili.

This was so bland, I don't understand why people are raving about it. After four hours I tasted it and poured in half a bottle of beer. It didn't make it much better but at least now I didn't care so much.

Baked Kale Chips

This is quite yummy as is, but I like it even more with grated parmesan cheese sprinkled on top one minute before it's finished cooking. My 7 year old eats this like it's candy! You seriously cannot imagine how good this is until you try it. You can play around with spice combinations too. Chili powder and garlic powder are both good on it too. Be SURE to line the cookie sheet. This seems to be the trick to getting it to crisp up nicely. You can try silver foil if you don't have parchment paper.

Chesapeake Bay Pork Chops

I thought this was awful. The vinegar taste was overpowering, nowhere near enough Bay seasoning to make it really taste New England-y. Didn't like it at all.

Roasted Broccoli

This was inedible to me. It was ridiculously salty with only a pinch of salt added. I used twice as much broccoli as the recipe called for and the seasoning was still way too strong.

Lobster Tails Steamed in Beer

The beer changes the flavor a little but it doesn't scream "beer" so don't be afraid to try it. Easy, delicious! I used three tails for 8 minutes and it was perfect.

Love this recipe! It's great because the way each ingredient goes in for a certain length of time makes it all cooked exactly perfectly. But 2 tbsp of Bay Seasoning? Puhlease! We used half a can.

Dorm Room Cheesy Tuna and Noodles

Surprisingly good! I doubled the recipe and added a can of cream of chicken soup. I used chicken instead of tuna only because that's what I had on hand. I used one package of seasoning even though I doubled the recipe and that seemed just right. I also used cheddar because I find American cheese too waxy. My six year old loved it!

Over the Fire Scalloped Potatoes

We forgot to bring mushrooms and used all the bacon at breakfast (d'oh!) so I found this to be pretty bland without it. It was easy and interesting, but pretty blah so I will definitely try it again with the bacon and mushrooms next time.

Individual Egg Bakes

I added a strip of muenster cheese on top of the bacon before the egg went in. These were tasty but not the most beautiful things I've ever seen. But definitely quick and easy. They'd be great to make in bulk and use them for fast breakfasts on the go.

Bacon Wrapped Dates Stuffed with Blue Cheese

I used gorgonzola and these were fantastic. I didn't need toothpicks either, just put them seam side down in the pan. So easy and sooooooo good!
