Red Enchilada Sauce

Reviewed: Nov. 8, 2006
I've never rated a recipe as terrible, but there's a first time for everything. This sauce is just bad, there's no nice way to say it. The funky smell of it didn't help either. Please don't ruin your food by using this recipe. Just use some salsa.

Beef Enchiladas I

Reviewed: Nov. 8, 2006
I've made this recipe 3 times now and each time i did it differently trying to make it better. This is what you do: Use steak-ums instead of beef. Don't put tomato sauce on top. I used flour tortillas. Who likes cooked sour cream? eww. Basically, follow the recipe for the meat and then roll up in flour tortillas. Then only put cheese on top (i used monterey jack/colby) and bake. Then on each person's serving, add sour cream, chopped green onions, chi chi's salsa... This tastes really good!

Butternut Squash Bisque

Reviewed: Jan. 15, 2007
Excellent recipe. I cut the butternut squash in half, added a little water to the pan, covered with foil, and baked at 350 degrees for almost an hour. I followed the rest of the recipe except, i omitted the nutmeg because i hate that stuff, and i added a dash of garlic powder.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Jan. 22, 2007
This is a good recipe, however, it came out tasting VERY salty. If you like overly salty tasting meat, then this is perfect for you. I didn't use a crock pot, I just cooked it very slow on the stove in a pot for the same amount of time. Perhaps axe the soy sauce...

Corn Chowder II

Reviewed: Jan. 24, 2007
I tripled the recipe, added about 1/2 cup heavy whipping cream (in addition to the milk), a dash of extra sherry, and an extra can of creamed corn. Also, i waited to add the seasonings til i added the corn. It didn't taste good until i added the cream.

BBQ Pork for Sandwiches

Reviewed: Jan. 24, 2007
The way i made this turned out excellent! I used approximately 5.5 lbs of pork ribs with the bone since i coulldn't find boneless. I made my own sauce from a Taste Of Home recipe i have for pork ribs. Plain bottled sauce seemed like it wouldn't taste good. The recipe i used for the sauce is: 1/2 cup cider vinegar 1/2 cup packed brown sugar 1/2 cup ketchup 1/4 cup chili sauce 1/4 cup Worcestershire sauce 2 tbsp chopped onions 1 tbsp lemon juice 1/2 tsp ground mustard 1 clove garlic, minced dash cayenne pepper Combine all sauce ingredients in a saucepan. Simmer, uncovered, for 1 hour or until slightly thickened, stirring occasionally.

Broccoli Cheese Soup

Reviewed: Jan. 26, 2007
I like this soup, however, i had to make some changes. I used plain flour instead of corn starch, real cheddar cheese instead of that fake stuff, and sometimes i use leeks instead of onions (or in addition to).

Brown Sugar Meatloaf

Reviewed: Jan. 26, 2007
Great recipe, except, i don't like biting into it and finding the pieces of the crackers. The taste just doesn't blend. But i guess they serve a purpose lol.

Classic Tiramisu

Reviewed: Jan. 27, 2007
This recipe is great if you follow it exactly and don't try any substitutions. I did shave some extra chocolate on top and added a tiny bit of an extra splash of the coffee flavored liqueur.

Jamie's Minestrone

Reviewed: Jan. 27, 2007
this is a great soup. I added 2 fresh chopped tomatoes, and I recommend less zucchinis. And, of course, add the pasta as you need it like the recipe says.

Caribbean Jerk Pork Chops

Reviewed: Feb. 2, 2007
We let the pork chops marinade for 24 hrs. They were sooo good, and this is coming from someone who is generally very picky. I highly recommend this recipe.

Tangy Honey Glazed Ham

Reviewed: Feb. 2, 2007
I tend to change recipes because i'm picky. Since i don't like orange on ham, this is what i did and it tasted great: Didn't use the orange juice or the orange zest. Boiled ham and then baked it with the glaze the last hour of cooking.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Feb. 2, 2007
I hated how sometimes i'd take a bite and it was great and other times it was like, surprise, a lot of garlic. Next time, i'm going to either omit the fresh garlic, or just use a slight sprinkle of garlic powder. I don't like garlic when i can taste it.

I made these in the oven rather than the microwave. They're pretty good and not greasy.

This was pretty good. I think it would have been better if the Asiago cheese had been shredded.

Tomato Chicken Parmesan

Reviewed: Dec. 29, 2007
This was pretty good. For the cheese, I used mozzarella. And for the pasta sauce I used the Old World style by Ragu. I found that it needed a little more sauce than it called for, but only a little.

Tangy Slow Cooker Pork Roast

Reviewed: Jan. 17, 2008
The recipe sounds odd, but it's surprisingly great. And if you've seen my other reviews, you know I'm a tough critic. I used a red onion and a little less salt. As suggested, I served this over egg noodles and I browned the meat before placing in the slow cooker. Cabbage and potatoes makes a great side dish for this.
