Puerto Rican Pork Roast

Muy bueno! Excellent! First off... slice the fat so you can peel it back. Then stab holes and stuff seasoning in. Fold skin back over the meat srub rest of seasoning ovrr fat and cookfat side UP. It comes out extremely moist that way without having to cover it and the skin gets nice and crispy!.. For those that like to eat thd fat. I dont but some do!

Grilled Cheese Sandwich

GREAT! I used 2 slices of American cheese as opposed to the cheddar. OOey gooey cheesey deliciousness! Excellent with Amy's organic tomato Bisque soup- which can be found in the organic isle of your supermarket..it is THE BEST tomato soup!

Wazzu Tailgate Chili

Fabulously flavorful! =) I have been home for 2 days cooking my heart away to get through Hurricane Sandy. Thankfully no loss of power! For this recipe I skipped the habanero and only used 1 jalapeno & a 1/4 tsp of Cayenne Pepper as I'm not into too much "heat". Used 3/4's green pepper and 3/4's red pepper and also used light red kidney beans, dark red kidney beans and Canneloni beans to add color to the recipe. I also threw in 4 tablespoons of the Speedy Salsa recipe from this website that I made yesterday. Totally delicious! Excellent the first day and even better the next day after the flavors have congealed. Great recipe~ Thank you!

Creamy Parmesan and Sun-Dried Tomato Chicken Penne

Great flavors! I made as written & it was very tastey.. I made it a 2nd time and added pancetta and peas...absolutely delicious. (If you don't like pancetta- throw in some precooked bacon! Gotta try it!!! You will love it!!! =)

Fabulous appetizer! I have also made these with Boars Head honey turkey, precooked bacon & swiss cheese-just double up on the turkey!! SLAMMIN! =) Delish served hot, room temp, or cold.

Slow Cooker Beef Pot Roast

Delicious!! Of course I love to change things up a bit ...I used 3 cups of low sodium BEEF broth as opposed to chicken broth & some Worcestershire SauceAlso, I LOVE a healthy hearty stew so I threw in parsnips, corn, & greenbeans as well. It came out fabulous

Mini Spinach and Crab Quiche

Incredibly DELISH! I think I am one of the first to try these or rate them anyway...I used REAL crab meat and O..M..G! This is the 2nd time I've made these now.I made these as appetizers for a gathering and I got rave reviews...loved by all- they were fabulousoooo! Thx! Great recipe! =0)

Garlic-Lemon Double Stuffed Chicken

What a flavorfull dish!! I scaled this down for 3 people and we all just LOVED this! I added extra fresh squeezed lemon juice. THATS IT. It is perfect as written. Thank you for another way of making your plain old chicken super delish! =)

Stuffed Chicken Valentino

This recipe was just "OK" in my opinion. I think IF I make it again next time I will filet the breasts in half and then cut them down the middle and THEN pound them out & roll them up individually. There was so much chicken that you couldn't really taste the filling.

LOVE these! I used less Rosemary and used broccoli heads, yellow & green zuchini, baby bella mushrooms, red onions & red & green peppers... it is the PERFECT mix of veggies!!! They are delicious hot or COLD!! YUM!

Creamy Rice Pudding

I loved this! I added about 2 extra Tablespoons of sugar and after combining the rice milk and salt added 2 "old school" REAL cinnamon sticks during the entire cooking process. Tasted just like how my mom used to make it. Discard cinnamon sticks when done. =)

Potato Latkes I

I used only 2 eggs and lots more onion! Instead of flour or matza meal I used Bisquick...about 3 tablespoons & they were scrumptious! Really hit the spot this Christmas morning. =) For toppings I used applesauce & if you use sour cream- cut up some chives & mix it in w/ the sour cream...YUMMY!!

Chicken In Basil Cream

This was good! BUT.. the sauce came out to thin.. I like a thicker sauce so I added 1/2 cup whit wine mixed with cornstarch to thicken it up the second time around that I made this dish.

Cream Puffs

Ok, I LOVE the puffs but the filling? Do yourselves a favor and DO NOT USE INSTANT PUDDING!! Use the kind you have to cook!!!! Let it come to room temp then mix in a few dallops of Cool Whip. The texture,the creamyness, THE TASTE... is SOoooooO much better! =)

The Best Meatballs

I just found this recipe on here and compared it to my own that I have used for many years. I NEVER add water to my recipe. The eggs in the mix keep the meatballs moist! Also I use seasoned breadcrumbs & add more italian seasoning to the mix as well as onion powder. BAKE in oven @ 425 for 10 minutes then lower temp to 325 and cook for 10 more minutes and transfer them to your sauce to finish cooking. It gives the sauce the most wonderful flavor! Add pepperoni & braised brasciole for a real italian sauce.
