About this Cook
I'm 40 and married to the most WONDERFUL man on earth...(although he is a picky eater) My son who is 18 is my life...(not too much of a picky eater) Me? I like just about ANYTHING! I love to garden growing mainly plum tomatoes, lettuce, spinach, squash, zuchini, eggplant, and many different kinds of herbs. There is nothing like seeing that hard work pay off and being able to go out into your own backyard and pick your own homegrown veggies and herbs...except going for a weekend drive in the summer and buying them fresh from the farm.
My favorite things to cook
Where to begin! I have sooo many faves! Salmon on the grill or baked in the oven, Lobster- an absolute FAVE!, Shrimp, Cod, Sole, Flounder, Chicken and Turkey. I'm not eating red meat anymore for several different reasons, the first being that it is not good for you at all and because of PETA videos I've seen... yes, I said PETA. Everyone should go to that website and view the videos.. but you might not EVER eat ANY kind of meat again! VEGGIES! I LOVE VEGETABLES... just about all kinds. My faves are Spinach, Asparagus, and Portabello mushrooms. I've been trying to incorporate more vegetarian meals into my diet.
My favorite family cooking traditions
I make a wonderful Pork roast that I learned how to make from my beautiful mother (she passed away November 4th 2007).Bless her sweet heart. She taught me many wonderful recipes.

Stuffed Chicken Valentino
This recipe was just "OK" in my opinion. I think IF I make it again next time I will filet the breasts in half and then cut them down the middle and THEN pound them out & roll them up individually. There was so much chicken that you couldn't really taste the filling.

Roasted Vegetables
LOVE these! I used less Rosemary and used broccoli heads, yellow & green zuchini, baby bella mushrooms, red onions & red & green peppers... it is the PERFECT mix of veggies!!! They are delicious hot or COLD!! YUM!

Creamy Rice Pudding
I loved this! I added about 2 extra Tablespoons of sugar and after combining the rice milk and salt added 2 "old school" REAL cinnamon sticks during the entire cooking process. Tasted just like how my mom used to make it. Discard cinnamon sticks when done. =)
