Italian Rice Pie I

I needed a special Easter 2009 dessert. We had special guests coming this year and I wanted to impress. They were an older Italian couple, who I'm sure has had real good Italian Rice pie over the years. Well, needless to say, they were taken back as to the great flavors that were produced. I think it was the pineapple that won them over, plus the creaminess was superb. Thanks for this recipe, it's a keeper for life.

Chicken Caesar Pitas

Loved this, but I was a little lazy. When I was in the store getting the chicken, I bought croutons, put them in a Ziploc bag and banged them just a bit with a rolling pin just to reduce the size, also picked up some bacon bits. (I guess I was real lazy) Sprinkled the croutons and bacon bits into the delicious salad and everyone loved them. You can call me lazy on this one, but........oh heck, I'm just lazy.

Italian Sausage, Peppers, and Onions

I loved this recipe, but whenever I make SPO's I use XXX spicy rated Italian sausage from my butcher shop, other than that I really like the spice mixture in this recipe.

Insalata Caprese II

Heirloom tomatoes and fresh mozz is the only way to go with any Caprese. I think more EVOO and less Balsamic is better, but that is just this Italians taste. This is truly a super summer treat!!!

Half and Halfs

I was in the process of making my famous apple cake with cinnamon and nuts for a nice dessert, when I realized that my two nephews might not care for that kind of dessert. So I found the H & H's cookies, what a treat!!! They loved them. I them very easy to make, the dough came out very good. I cut back on the amount of chocolate chips to 1/2 cup and baked them closer to 10 minutes than eight (8). When my nephews left I put the "remaining" cookies in a Ziploc for them to enjoy in the car on their way to vacationing in Maine from Florida, passing through Connecticut to visit their uncle who always makes them a treat. These Half and Halfes were great!!!

Kimberly's Meaty Meatloaf

I'm not a huge meatloaf fan, but I had a couple of pounds of ground beef to play with and I found this recipe. What a very nice surprise, I found Kim's recipe very easy to follow and the loaf came out very good. I like bringing a sandwich to work now and then, and the leftovers made an exceptional cold sandwich on a hardroll.
