Simple Beef Short Ribs

Reviewed: Aug. 20, 2009
I used boneless short ribs, 1 can of Campbells Beef Broth, and a Coors beer. I browned the ribs very well and followed the recipe. I did put them in my crockpot. This is the best short rib recipe I have made and I have made several. It is so easy and every one loved them. I did thicken the juice with some flour mixed with water to make gravy. Oh my yes! Served with Brown rice and was highly praised. Thanks CooperCook for this great recipe.

Grilled Chicken Salad with Seasonal Fruit

Reviewed: Jul. 28, 2009
This is so good. I made it as is and used strawberries. I did lightly season the chicken when I grilled it. I absolutely loved the dressing. I would make this without the chicken too. So Good. I will have to try it with other fruits too.

Savory Chicken Breasts

Reviewed: Feb. 28, 2009
This is very good but has way to much bread crumbs. If I make it again I would use maybe 1/2 cup of bread crumbs. It is very similar to Swiss Chicken Casserole II which is much better even made with bread crumbs instead of stuffing mix.

Swiss Chicken Casserole II

Reviewed: Jan. 29, 2009
This was a hit with all my family. The only thing I changed was I cut the large chicken breasts in half and used only 3. Then I used Italian bread crumbs instead of stuffing mix. I liberally sprinkled them over the top of the chicken etc. and baked. I have served it with rice and with baked potatoes and tonight will do mashed potatoes. Excellent recipe.

Honey Walnut Shrimp

Reviewed: Jan. 16, 2009
Oh Yum, this is so good. I used reg. flour and I used the butter and brown sugar for the walnuts someone else suggested. Excellent. My family loved it and it didn't take as long to prepare as I thought. Served with Brown Rice. NOT low calorie but worth it.

Key Lime Pie VII

Reviewed: Nov. 6, 2008
This is the first key lime pie I have liked. So Good. My husband's favorite pie and he raved about this recipe. However, next time I will buy Nellie and Joe's 100% key lime juice. Those little suckers are a pain to juice! Love the zest in the pie though.

Bacon-y Bok Choy

Reviewed: Nov. 6, 2008
This is very good, I didn't use as much red pepper flakes as called for and next time will cut down to 1/4 tsp. It was too hot and spicy for us but other than that a hit with everyone. I didn't have a red onion so used a little sweet yellow one. Thanks for sharing this recipe.

Baked Potato Soup

Reviewed: Nov. 5, 2008
I made this and took note of reviews. I halved the spices and onion, added more potato and some sour cream. The crowd I served it to inhaled it and raved. Definitely a keeper. I gave it 4 stars since I changed it. Glad I listened as is spicy enough with 1/2 the seasoning.

Jamie's Minestrone

Reviewed: Oct. 29, 2008
This is one of the best soups I have eaten. I did add more red wine, about 1 to 1 1/2 cups. I don't add the macaroni as we don't like it. It freezes well.
