Fresh Pear Cake

I made this for a family gathering tonight and got rave reviews. Cut the spices slightly, added some ginger, and cut the sugar by 1/2 c. I also added a vanilla glaze from this site. Perfect. Served warm with vanilla ice cream.

Creamy White Chili

This was delicious and easy. I like that you don't have to have precooked chicken... saves a step. I added an extra can of beans, used fat-free sour cream, and subbed in evaporated milk for the cream, just to make it a little healthier. My whole family loved it! Served with grated cheddar and crushed tortilla chips. My kids told me it was amazing!

No Bake Peanut Butter Pie

So easy and soooo delicious! I agree with others -- an oreo crust really adds to the combo. I also liked it with chunky peanutbutter, and I used real whipping cream with a little bit of sugar added. yum! Not your low-cal dessert, but oh so worth the extra calories!

Delicious Black Bean Burritos

Good, easy, fast, and my family loved it. I did as others suggested... doubled the recipe, added a can of diced tomatoes and a can of mild green chiles, along with some cumin and chili powder. I stuffed some cheddar in each burrito, and topped them with sour cream and salsa. Delish! It made eight medium burritos for our family.

Goat Cheese and Arugula over Penne

Nice for a change of pace for dinner. We used zita, subbed in feta, added bacon and parmesan and the juice from half a lemon. I cooled the pasta first, so it was more like a pasta salad, which my family prefers. Also, sauted the garlic with some minced onion and mushrooms. I know, I made quite a few changes. But it came together fairly quickly and easily. Would make it again.

Lime Cilantro Rice

Definitely needs some help. I made it as directed, then had to change A LOT to make it palatable. First, add some salt to the rice. Or, better yet, cook it in chicken or veggie broth (just add a bouillon cube to the water, or use straight-up stock). It could also use some garlic and/or onion, or garlic powder. The lime and cilantro ratio was fine, but it lacked flavor overall.

Make Ahead French Toast

LOVED this one! It got rave reviews at our house. I lightened it a little by omitting the cream and then using 2 cups whole milk instead of the 1 1/2c 2%milk. I also added some cinnamon to the egg mixture, and poured the leftover mixture over the entire pan of bread after "dipping." Greased the pan with butter, as others suggested. Used 1/3c butter and 3/4c sugar for the topping, and still found it plenty sweet. Thanks!!

Herb Vegetable Orzo Salad

Nice blend of flavors, pretty to look at, and a fun way to use orzo pasta. We didn't have frozen corn, so I used half a can of canned corn. Also didn't have greek olives (which I LOVE), but green olives were a nice twist. I think some black beans or even garbanzo beans would be nice and add some bulk. But then, I'd add extra vinegar. Actually, I added extra vinegar anyway. Also, I used cilantro (still in the parsley family) instead of flat parsley. Thanks for a fun, colorful salad!

Whole Wheat Blueberry Pancakes

These are great, even without the blueberries! I added a bit more sugar -- used the large brown grain, less-processed variety. Subbed in 1/4 c white flour because my family prefers a smoother consistency. But I think next time we'll go straight whole-wheat healthiness! Thanks!

Easy and tasty. I am steering clear of garlic right now (can't stand the "after" smell), so I just added some garlic powder and it was still great. I'm sure real garlic would be even more authentic.

Chicken Scampi II

very tasty! But of course it should be tasty, with so much butter. I didn't skim all the reviews, but would love to see if someone found a less fattening way to make it, where it still tastes great. I added capers and mushrooms to the chicken, then added pasta directly to the chicken, as others suggested.

Best Ever Blueberry Cobbler

Shrimp Fettuccine Alfredo

This was great and easy! I used 2% milk instead of half&half, to make it healthier. After it boiled 2 mins, I added a tsp of cornstarch with a 1/4c water to thicken. Worked perfectly. Also used dried parsley flakes instead of fresh. Very nice flavour.
