Pasta e Fagioli a la Chez Ivano

This one is a keeper. I pretty much followed the recipe but I used half ground beef and half italian sausage which made it oh so good. I also used a head of fresh garlic instead of the bottled. Also, I didn't have enough beef broth on hand so I used half mushroom broth. Turned out great and even better the next day.

Soy Ginger Salmon

Everyone ate it, and that doesn't often happen in my house, so I will definitely make it again. I followed directions exactly, except I only marinated it for 5 hours instead of overnight. Still flavorful.

Aussie Chicken

This was good. Everyone in my family ate it (w/out mushrooms)which is very hard to do. I did think there was a little too much honey mustard sauce, so next time I will halve it.

Corned Beef and Cabbage

I've been making corned beef and cabbage on the stovetop for years, but for some reason never tried it in the crockpot. Then I tried this recipe, and had an a-ha moment! Of course the corned beef is going to be more moist and flavorful if slow cooked, duh! I actually didn't have a spice packet in the corned beef I bought, so I used 2 TBS. McKormick pickling spice instead. I also doubled the water so the corned beef was covered with liquid while cooking. Other than that I followed the recipe, and it turned out great. My only complaint was that the vegetables didn't have quite enough flavor, so I might add some kosher salt to the water next time.

Slow-Cooker Barbecue Ribs

The best and easiest rib recipe ever. I have done this twice, but I used my favorite bottled barbeque sauce. The ribs are moist and fall off the bone. Couldn't be easier or tastier.

Pumpkin Apple Streusel Muffins

Chicken Pot Pie IX

This is a very good pot pie. My only complaint is that is seemed like it needed more sauce in the filling. Next time I think I will increase the amount of sauce and then it will be perfect!

Strawberry Spinach Salad I

Delicious. Added sliced almonds for added taste and texture. The dressing seemed like it was going to be too sweet, but tasted wonderful mixed with the spinach and strawberries.

Paul's Pumpkin Bars

I have made this twice now and my whole family loves it. I make it in a sheet cake pan, because I don't have the right size jelly roll pan, and it makes a very moist cake rather than a bar. I top with cream cheese frosting and Halloween sprinkles and have served it for the last two years at Halloween. It's great!

Mom's Zucchini Bread

The best zucchini bread ever! My very picky 4 year old actually requests this bread and loves to help make it. I have made it a little healthier by substituting 1 cup of the flour with whole wheat and used egg substitute and it turned out just as moist and delicious.

Sweet-Potato Muffins

The taste of these are very good. My only complaint is the texture is a little dense, but since they pack in so much beta-carotene, I can live with it. My kids liked them too.

Awesome Carrot Muffins

I used 1/2 applesauce and these were moist. My 1 year old ate them, but my 5 year old didn't care for them. I thought they were pretty good, but not the best carrot muffin recipe I have tried. These are very healthful, so it's a good recipe for young children, but I think older children may want something sweeter.

Mini Meatloaves

I am not giving a lower rating because I didn't follow the recipe exactly. I used lean ground beef, 1% milk, and 2% cheddar to reduce the fat content. I added garlic powder and a little dried onion. Every thing else I followed exactly. These were okay, but not the best... I found them to be a little bland. If I used higher fat meat and dairy they probably would have tasted a little better, but I think the lack of seasoning in these is the only flaw. I did like the individual serving idea, and will be using that in the next meatloaf I make.

Delicious Ham and Potato Soup

This soup is pretty good, but next time I think I will add the chicken boullion powder, salt, and pepper before boiling the potatoes, as they tasted a little bland compared to the broth. I think if they boil in the seasonings they will have a better taste. Also, I personally think 1 tsp. of pepper was too much and I will halve it next time. Still, it was really good and not too high in calories.
