Kids Favorite Meatloaf

This didn't turn out very well for me. It's probably because I was not exactly sure what kind of cereal "crispy wheat cereal squares" are. I used bite sized shredded wheat, but I don't think that was right because they didn't break down very well in the ketchup mixture... could be chex?

Banana Blueberry Muffins

These muffins are okay, but not great. I made it as stated, except my bananas only yielded 1 cup so I added some applesauce to make the 1 1/2 cups. I also used two whole eggs instead of the 4 egg whites. They were a bit too heavy for my kids due to the fact that these are made with all whole wheat flour. If I make them again, I will probably use 1/2 white and 1/2 wheat flour. Overall, it is a healthy recipe with close to 1/2 fruit serving in every muffin. I like the fact that there is no added oil, yet they were still very moist.

French Dip Sandwiches

The family didn't much care for this, and my husband is a French Dip fanatic. I didn't think it was too salty, as other reviewers stated, but I did think the rosemary was too overpowering. It was also very dry, but it could have been the cut of meat I used which was bottom round.

Charley's Slow Cooker Mexican Style Meat

This was restaurant quality! So easy for so much flavor. I did cut down the hot sauce to 1/4 cup and I am glad I did because it was spicy enough for me.

Double Peanut Butter Cookies I

To date, the best eggless pb cookie i've found. Not as good as a recipe I have that takes 3 eggs, but since discovering my son is allergic to eggs, this one will become a staple. I misread the recipe, and added the chocolate chips to the dough, rather than melt them on top, but they were still pretty good.

Sweet-Potato Muffins

The taste of these are very good. My only complaint is the texture is a little dense, but since they pack in so much beta-carotene, I can live with it. My kids liked them too.

Vegan Apple Carrot Muffins

Strawberry Spinach Salad I

Delicious. Added sliced almonds for added taste and texture. The dressing seemed like it was going to be too sweet, but tasted wonderful mixed with the spinach and strawberries.

Grandma's Raspberry Bars

Taste was good, but I agree with the other reviewers that there was too much crumble. Perhaps reducing the amount of oats would help, as 1 1/2 cups seems way too much for the amount of dough you save for the topping. You couldn't eat these like a bar because the crumble all fell off. Also, they seemed too thin, and I will try it with a 9x9 pan next time.

Slow-Cooker Barbecue Ribs

The best and easiest rib recipe ever. I have done this twice, but I used my favorite bottled barbeque sauce. The ribs are moist and fall off the bone. Couldn't be easier or tastier.

Soy Ginger Salmon

Everyone ate it, and that doesn't often happen in my house, so I will definitely make it again. I followed directions exactly, except I only marinated it for 5 hours instead of overnight. Still flavorful.

Delicious Ham and Potato Soup

This soup is pretty good, but next time I think I will add the chicken boullion powder, salt, and pepper before boiling the potatoes, as they tasted a little bland compared to the broth. I think if they boil in the seasonings they will have a better taste. Also, I personally think 1 tsp. of pepper was too much and I will halve it next time. Still, it was really good and not too high in calories.

This is a very good pot pie. My only complaint is that is seemed like it needed more sauce in the filling. Next time I think I will increase the amount of sauce and then it will be perfect!

Yummy Honey Chicken Kabobs

These were good, but not fabulous. I was disappointed given the rating, but it was fine for a weeknight dinner. I may try making them again, but I may add some fresh ginger to bump up the flavor.

Corned Beef and Cabbage

I've been making corned beef and cabbage on the stovetop for years, but for some reason never tried it in the crockpot. Then I tried this recipe, and had an a-ha moment! Of course the corned beef is going to be more moist and flavorful if slow cooked, duh! I actually didn't have a spice packet in the corned beef I bought, so I used 2 TBS. McKormick pickling spice instead. I also doubled the water so the corned beef was covered with liquid while cooking. Other than that I followed the recipe, and it turned out great. My only complaint was that the vegetables didn't have quite enough flavor, so I might add some kosher salt to the water next time.

Peach Cobbler II

There is no thickener added to the peaches in this recipe, so it was very runny. The cobbler top was good, but the runny fruit ruined it. I should have gone with my gut and added some flour to the peaches before baking.

Triple Strawberry Cake

I agree with the last reviewer... this cake was mushy and wet. I triple checked the recipe because I thought it was strange to pour 4 cups of liquid on the cake. In the end, I put about 3/4 of it on and it still came out to be extremely wet. The taste was good, but the texture left a lot to be desired.

Hearty Breakfast Cookies

This is a hit or miss with kids. My 1 yr. old liked it, but my 5 yr. old wouldn't touch it. I thought it was pretty good, but too fattening for me to eat for breakfast. I would suggest halving the recipe until you know if it will be a hit because it makes a lot of cookies. There is only so much a 1 yr. old can eat, so I ended up throwing away most of them.
