Spinach and Feta Turkey Burgers

Absolutely delicious. RAVE review from my guests, including the men. Per other's suggestions: I sauted the garlic and onion and then added the squeezed out, chopped spinach to the onions and garlic before incorporating all the veggies into the cold eggs and turkey. I added a squeeze of lemon, a tsp. or so of salt and a couple dashes of pepper as well as a tiny bit of worchestershire sauce. Probably added 2 or 3 oz more of feta than the recipe called for. I also refrigerated the patties before grilling on a charcoal grill. I suggest serving these on onion sandwich buns with lettuce, tomato, & mayo. My guests were all so excited when I suggested serving them on the onion buns...and seemed to think they "made" these burgers.

Pumpkin Gingerbread

Holy YUMMY recipes, Batman. But definitely cut the sugar down to 2 cups. And I used half brown and half white sugar and 19 ounces of pumpkin because I had it in the fridge already. Everything else I did exactly as the recipe called for and the loaves turned out perfectly! I'll keep this one for sure.

Apple Dumplings II

I love apple dumplings, but this recipe was disappointing. The big issues were: 1.) The sauce was not good. It could've been a cinnamon-y flavor carrier, but instead it was like a gelantinous overly-sweet goo. It need cinnamon and nutmeg badly.The red food coloring made me feel like I was eating melted candy. Not good melted candy, either. 2.) Unless you're looking for a biscuit-type of consistency, this pastry was much too soft. The biggest reason is probably that there's just too much baking powder in this recipe. If you use this amount, that salty, almost carbonated flavor you'll taste is leavening. I'd use 1/2 tsp. if I made these again. 3. I felt the baking time and temp was off. I used Jonathan apples and they were still very firm after 35 min. while the pastry on the bottom of the dumpling was still slightly doughy. Maybe trying a higher baking temp (400 for the first 15 min and then 375 for the last 15) would make the apple nice and soft and the pastry crispy.

Easy Apple Rhubarb Jam

Yummy. Just like others have said, it's a little like apple butter but with a more tartness. I used 3 cups of rhubarb and 2 cups apples and it was perfect.

Pumpkin Apple Streusel Muffins

The smell alone from these is unreal. I think it's the combination of the apples and pumpkin, it's like Thanksgiving pies rolled into a muffin. Extra, extra good with brown sugar substituted for the white sugar. I used 1 1/2 c. spelt flour in place of white. If you've never used spelt, you can find it at your local health food co-op and it's perfect for baking--so subtle in flavor. I didn't even do the streusel topping, it would've been too sweet for me. Instead, the tops of these got ever so slightly chewy, like a nice brownie edge. The insides are super-moist and flavorful. Mmmm....I'll make these again and again in the fall season.

Vegetarian Bean Curry

LOVE this. Two changes I made: add ground turkey to the veggies in the beginning. Adds a great flavor and some meat to the dish if your family likes meat like mine. Also, for more flavor, sprinkle the finished dish with chopped fresh cilantro. I serve this with jasmine rice and a dollop of plain yogurt. Fabulous!

Denise's Peanut Chicken

I gave this recipe four stars since I used so many of the suggestions the first time. I had to add the lime juice suggested by one user, since it just made sense. And I substituted pb for the nuts, since it also sounded good. The pb added a nice creaminess to the sauce. The dish was *wonderful* and got rave reviews(except for my picky four-year-old). I served it over jasmine rice--yummy!!--but next time I'll use rice noodles. The peanut butter amount suggested(3/4 c) was a little much for us. Next time I'll use about 1/3c and maybe some added chopped peanuts. Also, if you're using pb, I think natural peanut butter would be much better than just regular Jiff. It was a tad on the sweet side, even though I had omitted the sugar.

Moroccan Lentil Soup

This was good. Tasted like a fragrant curry soup with some nice veggies. I liked the garbanzo beans, too. My family didn't love it so I'll probably reserve it for cold winter nights when I can make them something they like alongside it.

Brooke's Best Bombshell Brownies

Rockin' awesome brownie. It's a bombshell, alright. :) We like these even better than Hershey's Best Brownie. The eggs are used as the leavening, so they're chewy, moist, rich-flavored, and don't tend to get crumbly the day after like brownies mainly leavened with baking powder. This one's staying in my recipe box for sure.

Fish Tacos

The sauce was just okay for me. I liked it by itself with the fish, but the flavor combinations when the tacos were assembled wasn't what I was looking for. The FISH on the other hand, was AMAZING. Perfection.

Rhubarb Cake I

Our family loved this cake. I used half spelt flour and it was oober-moist. For the topping I used a couple tablespoons of oats(as suggested) and about a third less butter/sugar mixture. Still amazing and plenty of topping. This is so good.

Flourless Chocolate Cake I

My previous review is at this moment being revised. This is a stellar cake. I just did a couple things wrong. I came back to this recipe for the silky-smooth texture and rich flavor. My previous cake was a little on the thin side so I made some suggested changes this time and it was WORTH coming back to! 1.) As suggested I used 4 eggs and 2 egg whites. Still nice and rich, but gave the batter some height without adding too much density. 2.) I used 1 cup sugar and all bittersweet chocolate. I wanted that dark flavor but just a tad sweeter. 3.) I added 4 T. sifted cake flour at the end. Beat it in for 30 seconds on med-high. 4.) I wrapped the springform pan in foil to avoid water leakage(I suspect water leakage may have caused my cake to be thinner last time) 5.) I lined the bottom of my springform with parchment sprayed with PAM cooking spray. NOW it's the perfect cake. :)

Delicious Ham and Potato Soup

This is a stellar recipe. I puried the vegetables together before adding the potatoes. I then mashed the potatoes but reserved about a cup's worth to add some chunkiness. Beautiful, velvety texture...sooooo comforting!

Easy Morning Glory Muffins

These are divine! I'd love to try this recipe with less sugar and more whole-grain flour as they were a tad on the sweet side for our family. I used a half cup of whole-wheat flour, but I think I'd add double that amount next time. Also, I think I'll try subsituting applesauce for some of the sugar.

Shrimp Lemon Pepper Linguini

This is amazing. I increased the sauce amount and decreased the pepper amount as suggested. Also, I used thin spagetti and really liked it, but it's possible that I'd have liked it more with linguini(not sure how that would be possible!) I used frozen salad shimp so I think it would've been even better with fresh shrimp. The fresh herbs and garlic really kick it over the top. Also, the wine flavor is nicely subtle in the lemony-butter sauce. I"ll be making this again soon.

The Best Lemon Bars

I've made so many lemon bar recipes, since I love them so much. This recipe is absolutely the best one I've ever made. The balance of flavors between tart and sweet is perfect. The custard consistancy is creamy, not too stiff or soft. I made small changes suggested by SeattleMommy that included larger juice amount and added zest and salt. Results were divine.

Oatmeal Carmelitas

These were delicious, but I might have added less butter to the recipe had I realized how soft the crust and topping would be. I think next time I'll try adding the butter when it's still firm and cutting it in. Also, I used PB instead of the caramel topping since I didn't have any and the bars were good. But I'd note that if you're adding peanut butter to make sure to add the 3 T. of flour to it the same as you would if adding the caramel. Very good cookie--if pretty rich.

These turned out a little blah for my taste. They're aren't quite as crunchy and chewy as some peanut butter cookies I've baked. Flavorwise, they're not great either.
