Honey Grilled Chicken

It was too cold outside to grill, so I baked chicken thighs, seasoned with salt & pepper, in a 9"x13" baking dish with the other ingredients at 425 for 18 minutes, turning halfway through cooking time. This paired well with baked sweet potatoes ( 425 for 1 hour).

Asian Beef Skewers

Garlic Prawns

Cajun Roast Beef

Pork Tenderloin in Bourbon

I like to save my marinated and simmer it for 5 minutes, then remove from heat and stir in a pad of butter. I serve this with mac & cheese and steamed broccoli. Very tender & juicy pork and my 6 & 8 year old loved it.

Pork Medallions

This was a huge hit for my husband! I served this over wheat egg noodles. The pork was tender and sauce was just right. It brought back some old hunting memories with his grandpa. Unfortunely & surprisingly my 6 & 8 yr old girls did not care for it. I added extra mushrooms and broth and shaved fresh parm over top.

Low Carb Cauliflower Leek Soup

Hello soup season! I loved this. I followed this recipe with the exception of using chicken broth instead of vegetable both and I didn't not feel the need to add the cream. Wonderful texture, warmed the soul & healthy. What a perfect soup on our first day of snow.

Flank Steak with Horseradish Sauce

What a great marinade! I only had time to marinate for 2 hours and it still made a budget friendly steak taste much more. I served this with Creamed Spinach and Sauteed Mushrooms. It's a keeper!

Grilled Chicken with Rosemary and Bacon

I loved this! The bacon stayed on a lot easier than I was expecting. It had great presentation. I served it with roasted brussels spouts, pairs, red onion, pecans, & fresh thyme sprigs, served over rice. I will make this one again!

Aussie Chicken

This was very good. I served this with butter parm orzo, & salad. I also tried it as a slowcooker meal, which I would not suggest. The sugars carmelized quite a bit and the chicken was a little dry. I look forward to cooking this as written, in the over next time.

Cowboy Casserole

My family liked this! I didn't have the biscuits on hand, but instead served it with rosemary focassia bread and green beans. I made it mid-afternoon then put it in a slowcooker on "warm" so it would be ready for us at dinner time. We will do again!

Salmon with Brown Sugar Glaze

My whole family loved this! Simple and delicious! We grilled the salmon on a cast iron griddle and served it with green beans with satueed garlic mushrooms and bread.

Banana Oat Bread Pudding

Cajun Crawfish and Shrimp Etouffe

My husband and I thought that this was very good, but too salty. I used canned clams in place of the crawfish and clam stock in place of the fish stock. Next time I will remember to chop the veggies before I start the roux. (I had to call my 5 yr old over to stir my roux while I chopped.) It was still very much enjoyed!

Braised Venison with Rosemary and Shiitake

My entire family enjoyed this! I even enjoyed putting this together after lunch, and it was ready by 6pm. I first cooked some bacon in a cast iron skillet to get some of the drippings, then later chopped up 3 slices to add to the mix. Once I browned the vension I added that to my slowcooker. Poured off the skillet before sauting the onion, mushrooms & garlic. I put the entire 16 oz. of baby carrots in the cooker while I brought the wine a cognac to a simmer. I added everyting to the slow cooker and cooked on low for 4 hours. Turned out great! I did not use the cornstarch, as we like a more broth-like stew, so we can sop it up with bread!

Butternut Squash with Onions and Pecans

I think that this would've be better if it were roasted in the oven. I did add cinnamin and vanilla towards to end of cooking. Then sprinkled red pepper flakes over my own serving. Next time, I will not add extras and will roast it.

Baked Egg Rolls

My husband and I loved these! We dipped it in a mix of Thai Sweet Chilli Dipping Sauce and Hot Chinese Mustard. It took about 25 mins for the egg roll wraps to brown up. What a fun, nutionally dense spin on egg rolls. We will be making these again!
