Cheddar Baked Chicken

Reviewed: Jul. 11, 2007
I made this recipe with chicken breast tenderloins. I'm always nervous to use chicken breasts bc there is such a fine line between moist chicken and dried chicken bc I'm scared of undercooking it (thus always end up overcooking it). So - tenderloins are the way to go for me. I took the suggestions of others and added the onion powder as well. Chicken tastes great. Easy meal to make. I served it with my favorite side dish - HEB brand chicken rice! Also some green giant asparagus and I also baked some garlic cheddar biscuits. It was a fantastic meal and since the ingredients are always readily available (except the cereal - I just omitted it) I was able to make dinner for three for under $10. That's always a bonus!

Broccoli Rice Casserole

Reviewed: Jan. 2, 2007
great recipe! i didn't use celery bc i didn't have any. i made jasmine rice bc we dont have instant rice (be sure to cook it with a little less water than usual bc once you add the cheese/soup mixture, the rice will expand a bit). this was a fantastic side. will make it time and time again.

Cheesy Catfish

Reviewed: Jan. 2, 2007
I give this recipe a 5 after altering the recipe based on other reviewers' suggestions. i used no flour, only bread crumbs. i omitted paprika and instead added a tsp of cayenne pepper (and a little cayenne sure does go a long way). i hardly poured on any butter, less than half, and even that was too much. it does make the catfish soggy. you will def need to use the broiler to crisp up the outside of the fish. and lastly, I added mild chedder on top and had it broiled for about a min. the extra cheese on top really does zest it up. total cook time for me was about 25 minutes. as far as the extra dredge, yeah there is a lot left over, but i like excessive when i am dipping the fish in it. better to have extra than not enough. my husband loved this dish. i will have a hard time topping this meal...

Easy Cheesy Chicken I

Reviewed: Dec. 27, 2006
i gave it a 4 because of 2 factors averaged together - this recipe gets a 5 for how easy and convenient it is to make, but a 3 for taste. if you don't have a lot of time, throw in the ingredients and you are done (i also added frozen cut broccoli oen hour before it was ready). however, if you are expecting to take that first bite and say, "mmmmmmmmm," then you have to dress this up quite a bit. my family's reaction was... "it's not bad." i served it over egg noodles as many others suggested. I think kids will like it (note the recipe does say "cheesy" however its just creamy - maybe add another can of cheese soup or throw in cubes of cheese) amd kids will probably love it. for us, we weren't a fan - and it was voted that i don't make it again.

Barlow's Blackened Catfish

Reviewed: Dec. 19, 2006
this fish dish is super easy to make. i give it a 5, but be warned, it is THAT spicy. Like others, next time i will reduce the cayenne amount and the salt amount. Great over dirty rice and a side of asparagus.
