Asian Orange Chicken

Fantastic!! I used all the ingredients (except the corn starch), but I'm not a measurer so I just threw stuff in the pan after I browned the pieces of chicken and just let it simmer until reduced. My boys (10 and 7) raved! Who knew healthy, inexpensive, homemade "Chinese" food was so easy. We may never go back to the buffet restaurant again.

Chocolate Cavity Maker Cake

I followed the recipe except I substiuted Amaretto for the coffee liquer. The day I made it I thought,"Yeah, good but I could have made brownies." The next day I tried a piece and now I give it six stars! It has all of the flavor and moist consistancy of a lighter version of a brownie - in a cake. Somehow 100 times better than both. Definitely let this cake sit overnight before serving.

Broiled Tilapia Parmesan

OMG this dish is AWESOME!!!! I have a three-year-old and a six-year-old son and they both gave it 5 stars!! I kind of took some liberties with the recipe. I sprinkled a "meat tenderiser" on first and broiled for long enough to dig out the rest of the ingredients. I combined the recommended amount of parmesan with a Tbs of store bought minced garlic and some basil and Italian spices and the mayo (which was fat free), and Promise fat free spread intead of butter. This mixture would be amazing on any fish but is especially delicious on the delicately flavored tilapia. PLEASE TRY!

Caramel Pie

I wortked at O'Charley's restaturant and this is their recipe exactly - except they boil the large cans. I make this for family holidays using 2 small cans of low fat or fat free sweetented condensed milk. You have to put it in a bowl and "whip" it for a minute to get the lumps out. Everyone loves it! Try nuts and whipped cream or vanilla ice cream.

Caramel Frosting I

The folks who said this is too sweet are apparently Northerners. We Southerners know that Caramel Cake is like cake with a thin layer of fudge on top. Yummy! Especially with vanilla ice cream or a big glass of cold milk. I chose this recipe of all the caramel frosting recipies because it looked easy and I had all the ingredients. It has a very good flavor but I agree that I couldn't get it to look good on a white bundt cake. I tried the drizzle-by-spoon method and it just didn't work out. You can't spread caramel frosting; I knew that already. I think I will do this in a sheet pan and just pour it over the top. Maybe not pretty enough for Thanksgiving but great for the family.
