Sugar Cookie Icing

Reviewed: Dec. 15, 2013
Just found this recipe the other day and decided to try it on my Christmas sugar cookies. It is so easy to make and my cookies came out beautiful. I did have to add more corn syrup as stated in the directions. I was able to pipe the icing on and use a brush without any problems. The icing dries nicely so that I could store them easily all together in one container. I decided to use vanilla in place of the almond flavor and it turned out great. I will have to experiment with other flavors next time I make it. Thanks so much for sharing such a wonderful recipe.

Cherry Bars

These are so good with or without the icing. The taste reminds me of a danish you would get at the bakery. I only used 1 can of the fruit and found that to be just right for my taste. Made these to share at our town meeting and everyone loved them.

Baked Zucchini Chips

Reviewed: Aug. 3, 2011
What a great recipe and so easy to make. I will experiment the next time with more seasoning as we like a little more flavor. I used spray Pam on my cookie sheet and that worked perfect. Depending upon how crispy you like your zucchini you may have to adjust the time or the thickness of your slices.

Fantastic and so easy to prepare. My niece still has no idea that it is made with zucchini. I did find it to be bit more dry than other cobblers I have had, but it still very good. I will be making this again. My thanks to Beverly for sharing.

Crustless Cranberry Pie

Reviewed: Nov. 16, 2010
Just made this for the first time and I will be making it again for our Thanksgiving dinner. I didn't make any changes and it turned out perfect. This was the first time I have used fresh cranberries and was a bit leary about how it would turn out. It is a little tart, but I expected that. A little whipped cream or ice cream is perfect to off set that.

Zucchini Brownies

Reviewed: Aug. 25, 2010
Just made these last week and I have to say they are delicious. In place of oil I used applesauce and I also used both whole wheat flour and all purpose flour and the result was fantastic. I can't wait to share this with my grandchildren. I made a double batch and froze them. These brownies are more cake like, but extremely moist. A few other people posted that there was a vegetable after taste, but I disagree. When I first mixed the batter up and put it in the baking dish I thought it looked like I had too much zucchini in it. After baking it I could still see some of the zucchini on top, but after icing it you can't see any of it. If you have never cooked with zucchini before you really do need try this.
