Wonton Wrappers

Excellent for pot stickers; only needed to adjust the water just a couple of Tbs. more to get that elastic smooth dough. Quickly made it in the Cuisinart food processor. Roll out the skins as thin as possible, making them cook and crisp quickly. Don´t roll them too large because the edge flaps collapse when heated.

Basic Mexican Guacamole

Simple and quick to make. I left out the chilies and put just a dash of black pepper. Any kind of firm tomatoes will work and if lime isn´t in the fridge, use lemon juice instead. I love flexible recipes.

Plain Cake Doughnuts

Used exact ingredients and measurements; chilled the dough while prepping the counter and heating oil (level 4 out of 6; med-high heat); used 2 1/2 inch diameter doughnut cutter and got 15 doughnuts with their corresponding doughnut holes. I keep a pair of bamboo chopsticks just for frying things; perfect tool for frying up the doughnuts as well as useful to lower them into the hot oil without splashing.

Funnel Cakes IV

Wonderful with added vanilla extract. I tried pouring the batter straight from the spout of the mixing bowl but got irregular fat areas. It worked out much better using a refillable squeeze bottle (opening about the size of a Q-tip head). So versatile because you can serve the cakes with any fresh fruit and whipped cream, preserve or just powdered sugar.

Sarge's EZ Pulled Pork BBQ

EZ, versatile, and simple. Made mine on stove top using pot with heavy glass lid and cooked it on minimum heat for about 4 hrs. After shredding the meat, returned it to the pot and added my favorite BBQ sauce (Baby Ray´s or Bull´s Eye). I also added 1 tsp. of liquid smoke and 2 cloves of garlic.

One Bowl Chocolate Cake III

Perfect chocolate cake.....using 2 cups of flour. Have made this recipe (from Hershey´s can label) for years with success. This is my go-to recipe whenever I need chocolate cake to dress up with any topping and/or frosting of choice. The recipe yields two 9" round cakes.

Terrific glaze. In addition to pork, I imagine it could be used on poultry as well. Beware that the sugar glaze can burn on the pan bottom.

Pumpkin Soup

Wonderful soup. I doubled the amount of pumpkin, used ground black pepper, dried thyme, and green onion. Fresh parsley didn´t improve the flavor of the soup; it´s better leaving it creamy instead of having little herb pieces to nibble on between spoonfuls.

Marrakesh Vegetable Curry

Fantastic and I didn´t even fry the spices separately; I just browned the veggies and dumped everything else on top, including some fresh grated ginger. I would suggest adding more raisins because I just love it whenever I got a bite with a raisin once in a while and wouldn´t it be nice to get one in every bite?

Chinese Steamed Buns

Great versatile recipe. I get 8 buns from this recipe; I tried to double the recipe to get more buns but it doesn´t work. By the time I get to steaming the last batch or two, they´re over-proofed, giving them a bland flavor (sugar turned to alcohol) and poor texture. The buns freeze well; just re-steam them until soft.

Fresh Rhubarb Pie

SUPERB pie. Added 1 cup of strawberries; reduced the sugar to 1/2 cup and added 1/2 cup of Splenda to compensate the sweetness. Brushed top crust with egg wash and cut 4 slits for venting. Used a deep pie dish and didn´t have problems with any syrup spilling out. Flaky crust; no problem with sogginess and just the right amount of tang. Update: Made it again but with added bottled cherries and fresh strawberries. Beautiful color and flavor.

Turnip Casserole

Made half recipe with 2 turnips, each about 3 in diameter. Changes made were reducing sugar to 1/5 cup and keeping the whole egg. Soft bread-pudding-like texture and pleasant flavor; a combination of sweet and salty.
