To Die For Blueberry Muffins

I just made these muffins and they are excellent. I doubled the dough recipe and made 18 nice sized muffins. I did not double the topping and had exactly enough. Just for our personal preferences I used 1 cup of whole wheat flour, replaced 1/2 of the oil with applesauce, and 1/3 of the sugar with stevia. 18 minutes was just enough time to bake them. Best Chocolate Chip Cookies

very good cookies. I made them as written , baked one batch and they came out very flat. It's a humid evening in southwest Florida and the dough was very soft. I added a couple of tablespoons of flour to the remaining dough and they came out perfect. I used the red, green and chocolate chips for a festive Christmas touch.

Butter Rich Spritz Butter Cookies

I made these as written but baked them for 6 minutes, intending to watch the last 2 or 3 minutes. Unfortunately the bottoms were very brown already. I'll lower the temp next time.

Basic Crepes

I made these tonight, cutting the recipe in half. I mixed the ingredients in the order listed, and yes, the flour and egg mixture ended up inside the whisk. But after I scraped it out and added the liquids, it blended very well. They cooked easily and were delicious filled with the apples and cinnamon that I prepared before cooking the crepes. I was afraid crepes would be difficult but they were very easy. Thanks.

Amazing Whole Wheat Pizza Crust

I was trying to imitate Trader Joe's pesto pizza and this crust was a great start. I love a thin crispy crust so next time I'll divide the dough into thirds, partially bake it without toppings, then finish it off directly on the oven rack. I used the pesto recipe from this site made with my garden pesto. Topped it with mozzarella, fresh tomato slices and pre-steamed broccoli. Very delish.

Blueberry Crumb Bars

Like other posters, I used 1/2 c white and 1/2 c brown sugar, and I used butter. I also replaced 1 cup of white flour with whole wheat flour to make these delicious bars. I made them for yesterday's July 4 picnic and ate a couple of the leftovers for breakfast this morning. They are not too sweet but very tasty.

Apricot Chicken

This was delicious. Just sweet enough with a little added honey. I added shredded carrots, sugar snap peas and broccoli, served it over brown rice. I cooked it on the stovetop and it came out great.

Broccoli Chicken Roli

These were great. I omitted the onion and garlic, used 3 cans of rolls to make 2 wreaths. I baked them on a parchment paper covered pizza pan for about 15 minutes. Everyone loved them.

Roasted Pepper Tart

I added sliced grilled chicken and used only 2 peppers to make it more like a pizza or open quesadilla. It was delicious. the peppers came out great.

Chili Beef Casserole

This is a nice quick chili that's a bit spicy with lots of flavor. I left out the onion (hate them) and used frozen corn and peas. We're looking forward to eating the leftovers this weekend.
