Cream Cheese Frosting II

Reviewed: Oct. 6, 2013
I have used this recipe a few times now and love it! Last night, however, I could relate to those of you who have experienced runny frosting. I made this frosting ahead of time, and added an extra 1/4 cup butter so there would be more frosting in the end. I refrigerated it for one day. I let it soften a few minutes before mixing it again in the mixer. It was runny so I tried adding extra sugar... no luck. My advice is: 1. Make this in a room temperature area. If it seems warm at all, be careful of the temperature of your ingredients. 2. Follow the recipe. If you need more frosting, double the recipe, not just ingredients. This recipe is worth five stars if you make it the right way!

Quick and Easy Apple Muffins

Reviewed: Feb. 26, 2012
I added a little bit of almond extract and honey to mine. It didn't pump up the flavor like I thought it would. Next time I'm going to try tossing the apples in teaspoon or two of cinnamon, probably add some nutmeg, and more honey- like 3 Tbsp... I'll update when I make them next.

Hard Candy

Reviewed: Dec. 2, 2011
This recipe is VERY simple and easy to follow. It does take patience. If you use Kool-Aid as suggested (one packet to a TBSP of water) the flavor and color are great. I wanted root beer candy and used 1 TBSP of extract as in the recipe, but it does not taste like anything. Next time I'm going to use 2 TBSP of extract for sure. **EASY way to clean your pan: Wait a few minutes for the pan to cool a little (to avoid warping the pan) and boil some water in that same pan.

The Best Rolled Sugar Cookies

Reviewed: Oct. 26, 2011
I am making these cookies right now and have come into some problems. They spread way too much! I used a circle cookie cutter and they have come out so unevenly! And they crackle! I planned on decorating these with royal icing and now I'm not sure if it will work the way I planned...

Caramel Macchiato Cheesecake

Reviewed: Sep. 25, 2011
I just made this cheesecake last night. It was my first ever cheesecake. I had felt pretty intimidated about making a cheesecake but this recipe is easy. It is amazing! No cracks! I didn't have a spring form pan so I just used a 8 inch cake pan. I used a water bath too. I followed the directions but left the cake in the oven with the door open for about an hour. I also used a caramel Starbucks Via for the coffee flavoring. The directions for the coffee say one packet to 8 oz water. To make it stronger I used 4 oz hot water and let it cool in the freezer. I took the 1/4 cup for the recipe from that.

Soft Sugar Cookies IV

Reviewed: May 18, 2011
These cookies are just perfect! No frosting necessary! I didn't need 4 dozen cookies, so I halved the recipe. I also added a few drops of red food coloring before adding the flour to make pink cookies. I rolled them in sprinkles and colored sugar to make them pretty : )

Almond Bars

Reviewed: Apr. 24, 2011
These are delicious! I have made them twice and generously sprinkled the top of the batter with cinnamon and sugar like a snickerdoodle. Next time I make them I plan to swirl cinnamon throughout for a bigger cinnamon flavor.

Quick and Almost-Professional Buttercream Icing

Reviewed: Apr. 24, 2011
I just made this for some coconut cupcakes. I made one batch vanilla and one batch chocolate and the chocolate was AMAZING! I added about 2/3 cup cocoa as was suggested by a previous reviewer. It turns out thick and almost fudge-like. Best frosting I have EVER made. I added too much milk to the vanilla and it was a bit runny, but still good. It was also my first time piping the frosting onto cupcakes so it was a milestone baking event. I made this again for tye dyed cupcakes. It was vanilla flavored and awesome. Absolutely awesome
