Cream Cheese Frosting II
I have used this recipe a few times now and love it! Last night, however, I could relate to those of you who have experienced runny frosting. I made this frosting ahead of time, and added an extra 1/4 cup butter so there would be more frosting in the end. I refrigerated it for one day. I let it soften a few minutes before mixing it again in the mixer. It was runny so I tried adding extra sugar... no luck. My advice is: 1. Make this in a room temperature area. If it seems warm at all, be careful of the temperature of your ingredients. 2. Follow the recipe. If you need more frosting, double the recipe, not just ingredients. This recipe is worth five stars if you make it the right way!

Quick and Easy Apple Muffins
I added a little bit of almond extract and honey to mine. It didn't pump up the flavor like I thought it would. Next time I'm going to try tossing the apples in teaspoon or two of cinnamon, probably add some nutmeg, and more honey- like 3 Tbsp... I'll update when I make them next.

Hard Candy
This recipe is VERY simple and easy to follow. It does take patience. If you use Kool-Aid as suggested (one packet to a TBSP of water) the flavor and color are great. I wanted root beer candy and used 1 TBSP of extract as in the recipe, but it does not taste like anything. Next time I'm going to use 2 TBSP of extract for sure. **EASY way to clean your pan: Wait a few minutes for the pan to cool a little (to avoid warping the pan) and boil some water in that same pan.
