Chicken Enchiladas II

This was ok but I doctored it up quite a bit. I cooked the chicken in taco seasoning, used salsa instead of milk and added a couple jalopenos to it. Still it was rather bland so we topped it with more salsa. I also doubled the recipe as many have said to do, and still only had enough filling to make 6 decent sized enchiladas. As i said we liked what I ended up with but then again, it was quite different than the recipe I started with.

Banana Cake VII

This is a great cake. I have made 2 of them in the last couple days. Since I was taking the second to a potluck I doubled the recipe and made 3 layers instead of two. I frosted it using a cream cheese frosting recipe which I added one ripe banana to. All I brought home was an empty plate.

Black Bean Salad

This made for a beautiful salad-the color combination was great. Someone mentioned how horrible it looked-they must not have drained the beans is all I can figure. I did make a few changes. I added some cumin, cayenne pepper and chili powder. After I had it all mixed up I thought it was screaming for pasta so I added about a cup of cooked rotini. I used red and green peppers and also added a bit of chopped celery. I left the pimentos out because it was red enough and didn't have the avocado so I skipped that as well. My end result was a very tasty and pretty side dish.

Baked Potato Soup I

I thought this was good but no one else liked it-and my family loves soup as a rule. It is a very expensive version of potato soup to make and I don't think the added expense is worth it. My plain old potato soup is just as good. I followed the recipe as it was written but dilluted it with a bit of chicken broth at the end because it was too thick for our taste. I think half milk and half chicken broth would have gotten the same taste.

Mongolian Beef I

We liked this a lot. I used mule deer and it turned out great. I was out of red pepper flakes so I substituted a few shakes of cayenne and it worked fine. It is a super quick meal (don't quite get all the people saying it's a lot of chopping). I served it with rice and we were waiting on the rice to finish cooking. The kids loved it too so I will be keeping this recipe.

Banana Cranberry Bread

I was not very impressed with this recipe. I used hm cranberry sauce plus added some fresh cranberries as others suggested and still it really had no flavor of cranberries and only a hint of banana flavor. It did make a moist bread but mine fell in the middle-not sure what was up with that. I might make this again next thanksgiving when I have leftovers to use up but wouldn't bother if I didn't already have the cranberries.

Fried Rice I

This is a really good fried rice. I change a couple things is all. First I cook the rice ahead of time and chill it because I think it fries up better cold. And I skip the bacon and use chicken or pork. This is a family favorite that I never have to worry about leftobers with because they eat every bite.

Baked Rice Pudding

Oh my, was this ever dry. I added an extra cup of milk, a little extra water when cooking the rice and still it was like eating a bowl of rice. I added a little extra sugar because I like it sweet. The flavor was good-the texture not good at all.

Fragrant Lemon Chicken

I fixed this roast chicken in the oven and it was quite good. I don't like slimy chicken from the crockpot and my homerasied birds are way too big to go in one anyway. I basically followed the directions except I mixed the onions, lemon juice, and spices all together in a bowl and added olive oil. I put the juiced lemons inside the bird with the apple and celery. I also added a couple cloves of garlic to the inside and outside of the bird. Every hour or so I flipped the chicken over in the pan. It took about 3 1/2 hours to cook it at 350* and turned out great. I offered the juices to the kids but they didn't like them. I thought they were ok but nothing to rave about-glad I didn't thicken it for gravy. I will use this method again for roast chicken.

Chicken and Cheese Crescents

We did not like this. I ended up throwing it away and fixing the kids some sandwiches. I chose this recipe because it sounded really quick and we had to leave with little notice. The cooking time was way off-the rolls were still doughy. I honestly think they will always be soggy with all that soup on them. I have only made a meal 2 or 3 times in my life that we absolutely couldn't eat and this one falls into that elite catagory.

Coffee Roast

This was just not all that special. I did it in the crockpot and added a little onion soup mix as others suggested. To be honest, the gravy was lousy. It was like packaged or something. The meat was tender and good. The family thought it was neat that it had coffee in it but I probably would not make this again.

Apple Puff Pancake

This is not what I would call a pancake-closer to an apple ommlet. I had a different recipe called the same thing and couldn't find it so I used this one. I had to use a casserole dish rather than the pan it called for so I let it cook a little longer. It puffed, was brown, looked done,set it on the table to serve it and the inside was still runny as could be. It ended up taking almost an hour to get done. I will compare my other recipe to this one and maybe try it when I find it but will not make this again-apples and eggs do not go well with this family.

Adobo Sirloin

This was really, really good. I let it sit overnght and did the steak under the broiler. It would have made great fajitas as has been suggested but the leftovers I was planning on having did not exist-we ate every bite. Even the kids liked this steak. I served it with homemade spanish rice and a mexican style pasta salad and it was a terrific meal.

Herbed Chuck Steaks

This was not good.No one here would eat it and my kids are not picky. It tasted pretty much like red wine vinegar. Maybe using plain red wine would be better but I don't think it's even worth the effort of playing around with this recipe. I pitched it.

Chicken Fried Steak I

I think this was good. Mine was over cooked big time-not sure if my grease was too hot or if the time was off. I used round steak which I pounded out and it was a little chewy for the kids. Next time I think I'll try cube steak.

Charley's Slow Cooker Mexican Style Meat

This was really good. I didn't have enough green chili's so I used some chipotle which added some spiciness that we loved. I did it in the oven rather than the crockpot and it was fork tender.Will make this again.

Cheese Biscuits I

These are pretty good. I make them for a change now and then. The kids love them. I usually add some extra cheese and try to use fresh parmesan rather than the canned stuff. Sometimes I skip the garlic because dh doesn't care for it.

Cheddar Cheese Bread

This recipe was ok. I had to use mild cheddar cheese because it's all I had. I added quite a bit extra but it still wasn't very cheesy. I will try it again using sharp. I do not have a bread machine but it worked great just using the kitchenaid. I made a round loaf and cut a couple slits on the top and it made a very pretty loaf.

Sour Cream Chocolate Frosting

We weren't super crazy about this frosting. I love sour cream chocolate frosting but this just wasn't quite right for me. And the kids were not at all impressed.
