Dark Chocolate Cake I

Rich and dark, but not too dense. Loved it. Whipped whites separately and folded in. Otherwise, made to recipe.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Good recipe, but I made modifications. Used froz spinach, thawed and squeezed to remove water. Used 1/2 ricotta and 1/2 cream cheese for richer flavor (but used part skim ricotta and reduced fat cream cheese). Instead of garlic and onion powder, sauteed some fresh minced of each. Added a couple pinches of Emeril Essence, which really kicks the flavor up too. One strip of low fat bacon on each. Delicious.

Acorn Squash

I did cook it halved with the butter and brown sugar, covered, for 45 minutes and uncovered for another 10. It was wonderful. I also tried the suggestion on 2 of my 4 halves of adding bacon and I have to say that was a really good addition too. Will make this again in a heartbeat.

Prosciutto-Wrapped Cherry-Stuffed Chicken Breasts

I used pork chops and stuffed them with the filling and then wrapped them in prosciutto. Really delicious, but looked a little like an animal heart before I sliced it and put sauce on top. Not complaining though - overall presentation was very good and I will definitely make this again.

Slider-Style Mini Burgers

Giving it 5 stars because I don't believe in deducting points when I change a recipe. I made these today for my daughter's preschool graduation picnic. Made a double batch and sub'd ground turkey and ground chicken and halved the amount of mayo. Also used colby/jack cheese instead of cheddar. Pretty good reviews from the crowd.

Chocolate Cherry Cake II

Wow. Made this as a 10 inch double layer cake for a friend's graduation. Cherry pie filling in the middle and cherry buttercream on top and sides - then covered in fondant. HUGE hit.

Strawberry Ice Cream

EXCELLENT strawberry ice cream. My husband, who is a strawberry lover said it's in his top two ever. I may have added a bit more pureed strawberries, but otherwise left exactly as is described. Will make again.

Peanut Butter Eggs

I get requests for these every Easter. I don't add the coconut and use dark chocolate to ease (very slightly) how incredibly sweet they are. I also make them very small and use tempered chocolate instead of adding shortening to chocolate.

Cream Corn Like No Other

Great recipe. I did add a small amount of finely minced onion and garlic to the pan and lightly sauteed before adding the other ingredients. I also went a little lighter on the cream and a little heavier on the milk as well as a little lighter on the cheese. Very good.

Chocolate Ganache

Love this recipe - super easy and is great to dip brownie bites in or to pour over a cake. Bittersweet chocolate makes it delicious without being too sweet. Will use over and over again.

Fruit Dip II

Yum! Took the advice of others and used reduced fat strawberry cream cheese and a cup of Cool Whip. Tasted it before the Cool Whip and it was very good too - but the with that addition, it was lighter tasting. Goes with berries really well, but works with pretty much any fruit.

Rosemary Ranch Chicken Kabobs

Really delicious. I used half the olive oil, omitted the salt, and didn't add the sugar. Used rosemary from my garden. Marinaded after I cubed and skewered the chicken and left overnight. We put them in the smoker for 20 minutes and finished on the grill. Got rave reviews from everyone at our July 4th BBQ and had many requests for the recipe.

Cedar Planked Salmon

Great marinade. I substituted out the sesame oil because I didn't have any and added a little extra garlic. Used reduced sodium soy sauce. Used a little of the marinade as a sauce by reducing it and adding a little sriracha for heat. Delicious.

Corn Fritters

Very good recipe - be careful to watch both the size of your spoonfuls and the temp of your oil or you will get raw dough in the middle. Could've used a little more salt in the dough though. Tried it sprinkled with powdered sugar and also with a little garlic salt and both were very good.

Delicious Black Bean Burritos

Delicious. Added diced fresh tomatoes and used low fat cream cheese. Added my own recipe for rice (sauteed onions and garlic, add jasmine rice, chicken stock, and 1 tsp. cumin - cook per directions for rice - remove from heat and add chopped cilantro). Will definitely make these again.
