Orange-Cinnamon Chicken

Reviewed: Jan. 27, 2011
This is a good recipe. I made it tonight. I can see how some might not like the taste of the cinnamon with the chicken, but both my husband and I thought it was good. My 4 year old, who is a fairly adventurous eater (and who loves cinnamon), did not. I liked the savory/richness quality it gave to boneless skinless chicken breasts. I would make again.

Corn Fritters

Reviewed: Jan. 17, 2011
Very good recipe - be careful to watch both the size of your spoonfuls and the temp of your oil or you will get raw dough in the middle. Could've used a little more salt in the dough though. Tried it sprinkled with powdered sugar and also with a little garlic salt and both were very good.

Maple Walnut Pumpkin Pie

Reviewed: Nov. 28, 2010
Pretty good - made it with the suggestion of another reviewer, who makes a crust that is part graham and part AP flour. Loved the crust and the pie overall got good reviews at Thanksgiving.

Jalapeno Hot Sauce

Reviewed: Oct. 31, 2010
Pretty good. I used jalapenos from my garden that had already ripened to red and it made a nice orange color. Flavor was good, but I think it might be good with a little mustard powder added as well.

Goldenrod Eggs

Reviewed: Oct. 17, 2010
Just brought home eggs from the farm, so I was looking for something new to do with them. This was good, but bland for our tastes. So after tasting it, I spiced it up with a sprinkle of garlic powder and a few splashes of hot sauce and served with bacon. Made all the difference in the world.

Cajun Roasted Pork Loin

Reviewed: Aug. 25, 2010
Very good, but needed to make extra spice mix to have a respectable coating on the meat.

Okra and Tomatoes

Reviewed: Aug. 5, 2010
I have never had okra other than in gumbo before buying a bunch at a farmer's market at the prompting of my 4 year old. Used fresh tomatoes instead of canned, added 4 cloves of garlic, and some "emeril essence" spice. It was good - would make it again, but definitely needed both the garlic and the extra spice of the essence (hence 4 stars versus 5). Even my adventurous 4 year old ate it.

Caribbean Rum Punch

Reviewed: Jul. 6, 2010
I made this for our 4th of July BBQ and it went over well - even my sister, who doesn't really drink thought it was very tasty. I used pineapple orange juice and spiced rum.

Slow Cooker Carnitas

Reviewed: May 6, 2010
Great rub! (Based on other recipes, I added some other ingredients to the roast: oranges & Onion. Also, because I didn't have 10 hours, I roasted it in the oven for 3 hours and then pressure cooked it to get to the "fall off the bone" tenderness. Finished it off in the broiler to give it the crispiness that my favorite restaurant's carnitas has.)

Peanut Butter Eggs

Reviewed: Apr. 10, 2010
I get requests for these every Easter. I don't add the coconut and use dark chocolate to ease (very slightly) how incredibly sweet they are. I also make them very small and use tempered chocolate instead of adding shortening to chocolate.

Candy Strawberries

Reviewed: Mar. 28, 2010
Made these last easter and those who liked them, really liked them. I thought they were a little bit strange tasting. Will make again if asked, but probably not choose them myself.

Strawberry Ice Cream

Reviewed: Mar. 16, 2010
EXCELLENT strawberry ice cream. My husband, who is a strawberry lover said it's in his top two ever. I may have added a bit more pureed strawberries, but otherwise left exactly as is described. Will make again.

Richard and Suzanne's Louisiana Crawfish Pasta

Reviewed: Nov. 12, 2009
Good base recipe and can be adapted to be a little less bad for you too. I used 1/2 cream and 1/2 2% milk and thickened with corn starch, and used less butter than called for. Added chopped asparagus, more garlic, and creole seasoning. Without the added seasoning, it would've been pretty flat in flavor. It would be really good with some spicy sausage too to give it more substance.

Artichoke Spinach Lasagna

Reviewed: Oct. 11, 2009
Good recipe. Only changes I made were using homemade pasta sauce I canned with my gardent tomatoes, using lower fat cheeses and adding in a little low fat ricotta for additional creaminess in the layers. Also a few chopped black olives.

Stuffed Peppers with Turkey and Vegetables

Very versatile recipe. Made many modifications, including using venison instead of turkey, no mushrooms, tomato juice instead of paste, added fresh hot peppers. Liked it - will try with other modifications as well. Thanks

Barlow's Blackened Catfish

Good recipe, very spicy. cut salt to a pinch and italian dressing to just whatever coated the fish. I wrapped the fish in foil in the oven and it only took 15 minutes to cook. Would make again.

Chocolate Cherry Cake II

Wow. Made this as a 10 inch double layer cake for a friend's graduation. Cherry pie filling in the middle and cherry buttercream on top and sides - then covered in fondant. HUGE hit.

Slider-Style Mini Burgers

Reviewed: Jun. 5, 2009
Giving it 5 stars because I don't believe in deducting points when I change a recipe. I made these today for my daughter's preschool graduation picnic. Made a double batch and sub'd ground turkey and ground chicken and halved the amount of mayo. Also used colby/jack cheese instead of cheddar. Pretty good reviews from the crowd.
