Quick Fruitcake

My husband LOVES this recipe! I'd prefer more candied fruit and less batter, but this one's a keeper. Brought it into work and everyone who likes fruitcake asked for the recipe. I've been looking for one that doesn't have to sit for weeks in cheesecloth, and this is it. Thanks!

Connie's Zucchini "Crab" Cakes

Excellent! I didn't change the ingredients at all (and didn't press out the zucchini after grating, either). I didn't flour, but baked on a cookie sheet (13 minutes at 400, flip and 10 minutes at 400). Perfect, and it was wonderful. I can see making these regularly! Comes to 4 WW points+ each (18 points for 5), but well worth it. Thank you!!!

Apricot Brisket

This was flavorful ... I added dried cranberries, too. There is an error in the cooking time, however (I looked at the 2 hours 30 minute cook time and it messed up dinner ... wound up serving it the next day). Following the directions, there should be 3 hours of cooking, plus an additional 1/2 hour if necessary. Gravy is excellent, though!

Peanut Butter Chocolate Chip Cookies III

Quick and Easy Monkey Bread

Yum. Trust the recipe. First time, I bought a bag of 36 rolls (3 lbs), making 1 1/2 lbs 18 rolls. Well, 9 rolls on the bottom didn't look like enough, so I changed it to 12 for each layer. Was okay, but dry. Next time, 9 rolls allowed for stuff to be more gooey. Thanks for a great (but easy) recipe!

Casablanca Chili

I tried this recipe on a whim - it was too weird to pass up! I really thought I had a "let's order pizza" recipe when it was cooking, but the taste is AWESOME! My husband says I have to make it again (I might try the chicken next time) and even my 18-month old liked it (although it's a bit spicy). Reheating leftovers at work resulted in a bunch of people asking for the recipe! Thanks!

Awesome Grilled Cheese Sandwiches

After reading the reviews, I lowered the oven temperature to 400 and baked on the lowest rack of the oven. It still only took about 2 1/2 minutes per side -- Just watch them. Also, as a timesaver, I used buttery cooking spray instead of butter with great results. Insides & outsides were perfect. Thanks for the start of a great recipe!

Cajun Barbecued Chicken

Good recipe. Chicken was tender and presented well. 2 year old liked it, 7 year old hated it (too spicy). Husband LOVED it, and we're looking forward to the leftovers. Served with JP's biscuits (on website) -- replaced salt in biscuit recipe with the cajun seasoning, too. Thanks for a great meal!

Scottish Shortbread III

I, too, added vanilla (a bit over a tsp -- I'm bad not measuring), and actually had to decrease the baking time by 15 minutes, because the ends were browning. My husband (who would like to own stock in Walker's Shortbread) said it was better than Walker's. Thanks for a keeper.

Incredible Punch

What a terrific recipe! My 6 year old loved it and enjoyed passing it out to everyone. This is much, much easier than my other slushy punch recipe! I halved it for a party (ex. 25 servings), and six people finished it off. Thanks!

Cranberry Sauce Extraordinaire

This is a great recipe and adds personality to something most people are used to getting out of a can. I did have a bunch leftover (a little goes a long way), but I rubbed it over a pork roast and put it in my slow cooker for 8-10 hours. Made a nice dinner, and I used up the cranberry sauce! Thanks!

Cajun Chicken

Really great! Although my husband was disappointed it didn't have more "kick", my 2 and 6 year olds ate it up! Instead of grilling outside (it's cold here in the Chicago area), I used the George Foreman grill, and it worked really well! Thanks for a tasty recipe!

Clone of a Cinnabon

YUM! I made these for my family during a recent snowstorm and they went very quickly! I've also tried them using frozen sweet bread dough (found in the frozen section of grocery), and it works great that way, too - I took the dough out to thaw before going to bed. Thanks!

Mexican Layered Dip

I substituted a layer of salsa instead of tomatoes and only used 1/2 of taco seasoning, too. It was well received and good, and I'll probably make again. I did make it ahead (using the lime juice in the guacamole!), and the leftovers (very little!) were still good. Thanks.

Herbed Pork and Apples

Oh, wow. What a WONDERFUL recipe! I used tenderloin, and it came out spoon tender. I used 3 teaspoons of Poultry Seasoning instead of the ones listed, and, yes, I used cheap maple syrup, but it was still fantastic! (I also used cornstarch to thicken the gravy, instead of boiling it down -- worked great!) I served it with buttered noodles and asparagus. I can't wait to make it again. Thank you SOOOO much!

Oven Baked Jambalaya

Good recipe. It made a VERY generous 16 people serving. Four people have eaten generously for 2 meals so far, and there's barely a dent. First time I'm making it from scratch (have used mixes in the past), and it's SOooooo....much better than the mix. Used regular beef smoked sausage (the andouille was very high priced at the store) and it was fine. Thanks.
