Clementine's Oatmeal Chocolate Chip Cookies

Reviewed: Apr. 14, 2014
These are a great substitute for the Neiman Marcus cookies I usually make - much less fuss. I cooked them no more than 8 minutes - didn't look done, but they cooled perfectly.

Alfredo Sauce

Reviewed: Apr. 14, 2014
This was wonderful! I was looking for a side dish, and this was great. Did lighten it some -- used fat free half-and-half and Smart Balance (the kind with olive oil). Perfect -- still tasted rich. Thanks!

Oven Baked Jambalaya

Reviewed: Oct. 13, 2013
Good recipe. It made a VERY generous 16 people serving. Four people have eaten generously for 2 meals so far, and there's barely a dent. First time I'm making it from scratch (have used mixes in the past), and it's SOooooo....much better than the mix. Used regular beef smoked sausage (the andouille was very high priced at the store) and it was fine. Thanks.

Apple Strudel Muffins

Reviewed: Oct. 13, 2013
Good general recipe. Only change was 3/4 white sugar and 1/4 brown sugar, and a tsp of cinnamon, 1/2 tsp cardamom. I don't know what happened with the topping, though -- it didn't stay crumbly but melted. Taste was fine, just the tops looked weird. If I get to making these again, I'll try a different topping.

Easy Morning Glory Muffins

Reviewed: Aug. 24, 2013
Very good. Had some old baby carrots that I wanted to use up. Just used the food processor to grate. Measured the shredded carrots, then used the dirty processor to shred the apple. Very quick, relatively easy clean up. Needed more raisins -- will probably use a full cup next time. Might try adding nutmeg or cardamom as well as substituting apple sauce for part of the oil. Made 23 muffins. Thanks!

Aunt Anne's Coffee Cake

Wonderful! I doubled the recipe and used a 10 X 17 lasagna pan for church -- it was totally gone. Perfect for what I was looking for. Thanks!

Turkey Carcass Soup

Reviewed: Aug. 27, 2012
Wonderful flavor! I didn't have cabbage, so left it out, and used a 28-oz can of petite diced tomatoes, which was perfect. Will make this again and again. Thanks!

Connie's Zucchini "Crab" Cakes

Reviewed: Aug. 11, 2012
Excellent! I didn't change the ingredients at all (and didn't press out the zucchini after grating, either). I didn't flour, but baked on a cookie sheet (13 minutes at 400, flip and 10 minutes at 400). Perfect, and it was wonderful. I can see making these regularly! Comes to 4 WW points+ each (18 points for 5), but well worth it. Thank you!!!

Aunt Carol's Apple Pie

Reviewed: Jul. 3, 2012
Love it -- been making it for years, but never reviewed. I don't mess with the free-flowing brown sugar; I combine and sift the dry stuff over the apples, stir to coat completely (adding vanilla) and then let set for 15 minutes or so. I brush my crust with milk (using a pastry brush) and then shake cinnamon sugar over. Yum!

Cornbread Muffins I

Reviewed: Jun. 7, 2012
Very good. Made it tonight and we really enjoyed it -- very closed to Famous Dave's! And (due to my 12yo daughter's using it up and not telling me) I found I had no baking powder. Wound up mixing 1/2 tsp cream of tarter with 1/4 tsp baking soda, then measuring the 1/2 tsp for the baking powder. I left out the corn. Wonderful -- very nice flavor. Thanks!

Barbie's Tuna Salad

Reviewed: May 12, 2012
I doubled the recipe for a church work day lunch -- VERY well received -- only 1 T left over. I used 2 cans (5 oz) and 2 bags (2.5 oz) because that's what I had in my pantry -- it was perfect. Great consistency (agree it had a bit of a green tinge, but it tasted really terrific). Everyone who tried it went back for seconds. Only change was to use onion powder instead of flakes -- I had run out. Thanks!

Texas Chocolate Frosting

Wanted icing for Cream Filled Cupcakes and this was perfect. I ran out of powdered sugar, so I only used 3 and about a 1/4 cups, but it was still terrific. Thanks!

After-Thanksgiving Turkey Soup

Very good. I boiled a roast chicken carcass with 2 bay leaves, poultry seasoning, onion and carrots. Removed them when I deboned, and made a tasty broth.

French Silk Chocolate Pie III

I cut the recipe to 2 sticks of butter, and it's amazing. So smooth, so light, so rich. I did mix for 5 minutes/egg. Wow. Thanks.

Scottish Shortbread III

Reviewed: Nov. 18, 2004
I, too, added vanilla (a bit over a tsp -- I'm bad not measuring), and actually had to decrease the baking time by 15 minutes, because the ends were browning. My husband (who would like to own stock in Walker's Shortbread) said it was better than Walker's. Thanks for a keeper.

This was great! Rich, yes, but great! Instead of messing with the chocolate shavings, I just sprinkled chocolate chips on top. Thanks!

Awesome Grilled Cheese Sandwiches

Reviewed: Sep. 23, 2002
After reading the reviews, I lowered the oven temperature to 400 and baked on the lowest rack of the oven. It still only took about 2 1/2 minutes per side -- Just watch them. Also, as a timesaver, I used buttery cooking spray instead of butter with great results. Insides & outsides were perfect. Thanks for the start of a great recipe!

Apricot Brisket

Reviewed: May 17, 2002
This was flavorful ... I added dried cranberries, too. There is an error in the cooking time, however (I looked at the 2 hours 30 minute cook time and it messed up dinner ... wound up serving it the next day). Following the directions, there should be 3 hours of cooking, plus an additional 1/2 hour if necessary. Gravy is excellent, though!
