Santa Fe Enchiladas

I baked my enchiladas at 350* for 30 minutes in the oven. I covered the pan with foil to prevent them from drying out. Thanks for the great recipe.

This has become a favorite of my family. Take caution with the sauce...try to get the mildest that you can find. The jalapenos seen to get warmer once cooked. A little spicy for the children but they still clean their plates. It is that good.

Chinese Noodle Chicken

This was very good. I used oriental style frozen steamer vegetables. It helped to cut back on preparation time. I omitted the chinese noodles all together. I was afraid that they would not cook thoroughly. The outcome was wonderful. I then served chicken and vegtables on a bed of coconut rice.

Vietnamese Iced Coffee

Very nice twist on coffee for the coffee lover on a hot day. It sounds too easy to be good but do not be deceived by the simplicity. This is wonderful.
