this recipe was so easy to prepare. simple ingredients, give fantastic results. one thing i disagree on is the time of cooking. pork chops come in a variety of thickness, and should be taken into consideration. i used the 'america's cut' chops from dominicks- approx. 1 1/4" thick (a decent size piece of meat). i cooked them for the time the recipe called for, and they were a little on the dry side. next time i think i am going with 40 minutes for the initial baking time, and 20 minutes after the soup mixture is added. so i am eliminating a half hour of baking time. the combination of the mushroom soup, wine, and juices from the chops, turns into a great gravy. which leads me to gravy's best friend- mashed potatoes. i served the pork chops over mashed potatoes, which was a great combo...and i would like to add a tip for making mashed potatoes: use yukon gold, they offer a more buttery flavor (leave the skins on, they are delicate anyways), and instead of mashing with the usual butter and milk, use a container of cottage cheese. it has the same consitancy and adds great flavor and is low in fat. add a little chives and ground black pepper for an extra zip. trust me, this makes for a great companion to these awesome pork chops!thanks for the great recipe dawn!
