Easy Apple Crisp

This is outstanding. Reading the reviews, I don't understand why everyone keeps adjusting this recipe. The name is EASY - if you keep it that way, it's outstanding just like it is. Otherwise, it will take as long as an apple pie.

Hash Brown Casserole II

This was fantastic! Everyone kept asking which potatoes I used and actually I just put 10 potatoes in the microwave for about 10 minutes, let them cool for about 10 minutes, peeled them then grated them. They ended up being a little crunchy which was absolutely delicious. I didn't put the topping on them simply because I didn't have any cornflakes but this is definitely a recipe that I will make again...and again.

Banana Crumb Muffins

These are excellent. The recipe made 12 large muffins and I put the extra into 8 litttle muffins. I also made extra topping. I pulled them out of the oven 10 minutes ago and they are almost gone.

Holiday Chicken Salad

I was actually flagged down at our PTO meeting by a group of women after making this for a teacher's appreciation luncheon. It is definitely one of my favorite recipes but I add extra cranberries for a little sweeter flavor. Excellent.

Whole Wheat, Oatmeal, and Banana Pancakes

Wonderful recipe. I love the fact that I'm sending my kids off to school with this in their system and not junk cereal. I use the sugar free Log Cabin syrup and they don't get that sugar high, then low that leads to them lacking concentration. Very, very good.

Swiss Chicken

This is an excellent dish and my kids absolutely love it. However, it is extremely high in fat so I make it with healthy request soup by campbells, no butter and fat free swiss cheese slices. The topping for mine is simply Peppperidge Farm stuffing crumbs mixed with a little bit of chicken bouillon and water to make a thick paste and place it on top of the swiss cheese and chicken. You won't miss the fat and the flavor is excellent. Enjoy!
