Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

I Made this last night and it was good last night I'd say a 4 1/2 star, Then we got it out today and made enchiladas out of it... 5 stars! It was so GOOD!Fabulous! Letting the flavors infuse overnight really made the difference between 4 and 5 star. I did make some changes that I do recommend. The first thing to change is not to use canned chilies. Instead Use 3 to 4 freshly roasted and peeled Anaheim chili peppers(mild ones), I also added 1 extra clove garlic that was roasted. I think this change will make your recipe worth making this. I also used Serrano peppers instead of Jalapenos, because I personally like their flavor better, but that probably doesn't matter too much. also added an extra 1/2 tsp. seasoned salt to the flour mixture. I doubled the bouillon and water, because I wanted more sauce for enchiladas. I made sure to add all the extra flour from dredging the meat to the pot before cooking it all together, so the extra sauce was still sauce and not soup.

Simple Whole Roasted Chicken

This was a very unique flavor and a nice change from the usual. I did double the seasoning including the salt. I put mine in the pressure cooker with 1 cup of water for 25 minutes. It was so good! but even better was the gravy. I took the juice from the chicken, let it come to a boil on med-high, whisked together 1 cup milk and 3 Tablespoons flour. then slowly poured the mixture in while whisking. Fabulous!!

Colleen's Potato Crescent Rolls

super light and delicate texture! This is what I've been looking for!!! I definitely used real butter since it tastes better and isn't as bad for you as shortening. I am not the best cresent maker, but found they turned out a little better if the triangles are wider and shorter, so they don't look like pigs in a blanket. SO Good! oh I did double the recipe for thanksgiving dinner there was a lot. and I did use the Bosch mixer to do it all including the kneading, I only kneaded it for 5 minutes since its more thorough. that made it easy.

Light Oat Bread

This bread is good! I DIDN'T USE A BREAD MACHINE. add sugar, warm water, melted butter,yeast and let stand 5 min. add dry ingredients to a seperate bowl then mix(I also added 1 Tbsp dough enhancer). add wet ingredients and knead till gluten is formed, let rise 1hour then punch down and let rise in an oiled loaf pan. cook at 350 for 30 min, or till light golden brown.

Golden Potato Soup

it was really tasty! wasn't as thick as I wanted it, but I put all of it in a crack pot on high for 5 hours added a carrot or two and it was EASY and so delicious! I doubled the recipe for a full crock pot

these are great! no gamey taste...followed the recipe. but opened a bigger jar of jalenos so we could cover the meat completely to soak. did use bug chunks of jalepenos. the flavor was great!

Authentic Thai Coconut Soup

Love this recipe, I used 1/4 c. dragonfly brand instant red curry paste, it has great flavor without the over powering you with spice. you can use any veggies you like, I personally like bamboo shoots, eggplant, zucchini, and green onions. simmer till flavors infuse and fresh tomatoes at the end are great too. if you like it a little thicker you can use a little coconut cream . this is totally one of those recipes you can tweak and it still turns out fabulous! just a tip if you don't use fish sauce you need to add salt to taste.

Chef John's Pumpkin Pie

I made this for Thanksgiving, It turned out great! Rich, Smooth and creamy texture. I used fresh butternut squash instead of canned pumpkin, cause that is what I had on hand and I like the fresh stuff better. I do think most any winter squash would work, a great way to use up the garden produce. Everyone loved it, They couldn't believe it wasn't pumpkin! I will be keeping this recipe along with Chef John's pie crust recipe.

great flavor I think this is a 4 1/2 star! hardly believe there isn't milk or cheese. doesn't even need it. can be slightly oily, so don't do more butter or mayo than called for.
